As a woman, I may "appear" to be a little flirty with men; it is not meant to be disrespectful. But everyone wants to be seen and acknowledged. My favorite targets are little children and church elders. They love getting compliments. And honestly, I mean it.

As a Jamaican I was proud of all the Caribbean dishes they presented to represent the West Indies. They all looked good.
The guy purposely scored low so he can win. He knew the others he tasted were far better than his own. They needed someone else, unrelated to be the final judge of this dish.

Dion is the only one who described the very process of achieving that authentic Caribbean oxtail dish, from washing it, the green seasoning etc. I think every Caribbean oxtail dish would at least start off that way. I had my first Jamaican meal during my trip in Toronto and it was a revelation. Their food is soooo good! I didn't even know what I was eating but all the meals were fantastic. Thumbs up jam!

I see so much African influence in Caribbean foods! My trip to Jamaica 🇯🇲 was eye opening! Our ancestors certainly did well to keep a lot of what they brought with them from across the Atlantic! I am Nigerian 🇳🇬 . We love our Oxtail too! But we mostly call it “Cowtail”

There should’ve been a forth vote because Chris came in with the strategy to score low to better his chances of winning. He did Thomas dirty because he knew he was competition.
Christopher skewed the scores by intentionally scoring other Conservatively. Needs at least one or all external judges. From what they all said Christopher had the weakest dish. But they were all very good.

Everybody has different tastes and preferences, but I do think the first dish was scored too low just because of size and spice level. It didn’t seem like it was extremely hot, especially with the way Dion was eating it. The second dish was clearly sweet with (I’m guessing) little pepper. It was unconventional for the other two guys, but they still scored fairly because it was good. I do wish there was a 4th judge or you should invite them all back for another competition. Similar to how the Bahamian moms cooked the whole thanksgiving dinner.😂
I think a food is spicy and my husband eats it like there is no pepper in it. This is not a good comparison.

Two people ate a sweet dish that is usually spicy and scored fairly because it was good even though it tasted “ like teriyaki and American” nor was it tender. The other contestant ate 2 dishes and didn’t like the spice level even though it’s supposed to be spicy. He also complained about the size which has nothing to do with how it tastes. That is what I saw. That’s an observation, not a comparison. About 65 people seem to agree. 🤷🏽♀️

I've found that the key is to coat the oxtails in seasoned flour and brown them before putting them in the slow cooker and cooking low and slow.

Nah not Jamaican oxtails - no flour required. We didn’t have the best representation cos oxtail is to cook on the fire low and slow not the oven
No. Never coat them with flour. Season them, leave them to marinate for an hour or more, then sear them on each sides before putting them with the fresh seasonings (onions, garlic etc) with water in a pressure cooker for 45minutes to an hour. Then it on the stove, lid off on low heat until it simmers down to gravy. The Jamaican way.

I like that they were all knowledgeable about how the dish should be prepared and also not super harsh about the dishes they tasted. Idk why all the hate for Chris in the comments but every contestant had their own style and preferred taste about how they like or prepare their own oxtail. I didn’t find him to be particularly rude; more so picky which is fine. Great episode 🔥

They simmer for 3 hours I made some with my bm, on March. Season it up really nice cut ur veggie add everything like onions bell peppers ,garlic, let simmer 1 hour or 2. The. Add ur potatoes and carrots butter beans let it go another hour then, done

Nor do we blend carrot puree in oxtail, he didn’t even add carrots nor do we say Oxtail”s”. It’s embarrassing to watch him win something food related as a Jamaican because he scored strategically. He prob a American/Jamaican.

Smh let the TRASH BE EXPOSED.He runs and works at a restaurant in Brooklyn, New York.I experience him as a manager and he was horrible as a person and a horrible cook when it came to his recipes. He sells days before, weeks, and months old food to the consumers in the neighborhood. Shiit is sad. He definitely needs to humble himself with his bland water recipes.HE IS NOT JAMAICAN HE IS HAITIAN & SHOULD BE CANCELED OVERALL!
You don’t add carrots but Jamaicans add carrot to every meat, from stew, brown stew, steam and curry. It’s not needed but it’s added cut up
