First off…good on you for showcasing a garbage plate! Second the “meat” sauce is 100% wrong. The texture is super important. You actually boil the “meat” starting in cold water. This gives a very fine texture vs. a bolognese type texture that you have. Cheers!
I’ve seen a few killer diners in my day and several of their owners say the key to a good consistent and meaty chili sauce is to boil the meat. Seems like a crime but the proof is there for the finding.
