I don't know if I'm missing something, but I like the standard profile. Is there really that much difference? I see that there are many difficulties in working with these flat profiles.
The standard profile is good. The colors are rich and I shoot in it from time to time (especially dark scenes with little light). But the dynamic range is significantly less and there is little room for color correcting and grading afterwards. So it really comes down to the type of work and workflow you have.
if you're not using a picture profile, can you still access this menu? also, how did you access this menu? when you select the picture profile, it just sets the camera to that picture profile.
If you turn off the picture profile you won’t be able to access it. Hit the right navigation button to open the menu (the right side of the round wheel at the back of the camera) Hope this helps
Ummm, I just checked my a6300. It does not have any settings for some PP. And I do not use any PP, so there is no setting to change. Am I missing something?

The GH5 has 10bit 4:2:2 so you"ll have better color depth to work with in post and it also has IBIS which is great is some situations. Sony is better in low light and is an APS-C sensor compared to the Micro 4/3 of the GH5. The VLOG of the GH5 is also quite noisy compared to Slog2. I think it will come down to what lenses you have access to, which of the camera systems you are more familiar with and look of the film you are going for

I've never actually changed it regardless of whether I'm shooting 4K or HD. But I would test it out

I’ve got both and yes the gh5 is better in my opinion but how user friendly the 6300 is I shoot with my Sony over the pana any day
Does this apply to normal photographs as well?
Well with photos you have the advantage of always been able to shoot RAW, and that gives you a lot of control in the edit
