I’m new to smoking meat and the store only had boneless shoulder & butt. I wasn’t sure how to deal with the meat since its pretty floppy. So, after watching all those other videos, I decided on using your video as a framework for my cook. Thanks!!!!

Nicely done! I also remove most of the fat cap and like to filet where the 2 muscles meet and remove the connective tissue. Lots more coverage for rub and bark.
It's personal preference honestly. The mustard works as a great binder and it won't mess up the flavor profile you're going for because you don't taste it at all. I've used no binder, different kinds of oil, etc, but I personally prefer mustard for pork!

Thanks mate. I only cooked bone in but the store hasn't had any, they only got boneless right now and was concerned it wouldn't good/shred as well.

You can't taste the mustard, it's only to hold the seasonings on the meat.
