Important note: nobody wants an iron sword. Go for steel, use human carbon with the human iron. Processing becomes harder, but the numbers needed are reduced. Plus you end up with a tougher sword that can tear the soul out of those struck by it.

You could simply keep 1 person alive in a constant state of torture as you extract their blood and slowly let them regenerate until you extract it again, using less people to make swords
Instead of just one, I’d say keep at least a dozen people
Then you have to worry about the cost of feeding and how long before their blood can be harvested again.

The average monthy donation is 450 ml if you're a healthy adult, but you could do it twice a month without having health problems, even then, there's no way you have enough time to extract the amount of blood you need without killing him in the process, here's a better idea:take 56 healthy male adults, divide them in groups of 4 people and get 500 ml from each one of them every 2 weeks, so in 5 years you can get enough iron to make a sword and kill them all with their own blood.

Idea: use blood you've harvested from yourself, and slowly build up the iron needed for such a blade. No one's ever done this, so you'll be a World Record Holder for having the first Blood-Iron Sword.
Given the number of bodies worth of blood required and the amount that one can safely donate at a time and the amount of time that it takes to replenish ones blood between safe donations I don't think that you would live long enough to make it even disregarding the negative side-effects of such constant blood-donation. Then again that was for a sword. Something like a dagger would probably be much more possible.

While this is all fine and dandy, you failed to mention two crucial things: pure iron is very inefficient compared to the technology we have at hand, and the number of people needed to make the sword can go down by using alloys. So instead, make your Blood Sword (TM) out of an ultra-high carbon steel. Carbon steel is far more effective in pretty much every way than pure iron, and ultra-high carbon steel in particular is especially effective for knives, axles, and punches (the tool, not the thing you do to senators).
So lets recap, one man has 4g of iron in their blood, women have 3.5g, and children have 3g. If one longsword weighs 1.5kg, that means you’d need 375 men, 429 women, or 500 children to make it.
Ultra-High Carbon Steel consists of 95.01% Iron, 2.14% Carbon, 1.65% Manganese, 0.60% Silicon, and 0.60% Copper.

As you can see, the number is far lower than a pure Iron Longsword (which takes either 375 men, 429 women, or 500 children to make), which not only makes it much easier to manufacture, but makes it far superior to plain iron in terms of strength, cutting power, and durability.
On top of that, all of the materials needed, carbon, manganese, copper, and even silicon, can all be found in fairly decent quantities within the human body, though I honestly don’t know whether or not these materials are left behind as a result of dipping the bodies in Hydrochloric Acid and Sodium Borohydride.
But even if you couldn’t obtain the materials from the dissolved and diluted remains of all the bodies we, um, disposed of, carbon, copper, and silicon are all fairly easy to find, and manganese supplements can be bought incredibly easily, with a bottle of manganese supplements costing 7.56 USD (not including shipping fees) on Walmart’s website.

As a bladesmith I can tell you you simply cannot expect to start with a billet of the same weight as your intended final product. A significant amount will be lost to oxidation during forging and abrasion during grinding and polishing. And this doesn't even take into consideration losses from all the smelting and refinement. You need way more blood.

@@Ocelot835 Depends on how much time your piece spends in the fire, how hot it has to get (if it requires welding it needs much higher temperature), which depends on how fancy you wanna make it and how fast and precise you are. Overall I'd say you're gonna lose at least 20% but it might very well go beyond 50%. So yea it might even be more than double.
