Chef Ryan shares with us how to make deodeokbab and deodeokgui, or deodeok rice and spicy grilled deodeok. Both dishes feature deodeok as its main ingredient. Often referred to as ‘meat of the mountain,’ this root vegetable is known for its unique texture and flavor. For grilled deodeok, deodeok roots are pounded, marinated in a spicy sauce and pan-fried to perfection. Pair it with rice cooked with deodeok roots for extra heartiness.
[Ingredients]
*Deodeokbab
2c Short grain rice
2 Deodeok roots
1T Perilla oil
3 Scallions
2c Water
*Deodeokgui
2 Deodeok roots
3T Puréed onion
3T Red chili paste
2T Rice syrup
1T Sugar
1T Sesame oil
1T Korean red chili flakes
1T Pine nuts
2T Cooking oil
[Directions]
*Deodeokbab
1. Slice 2 deodeok roots thinly.
2. Rinse and soak 2c of rice in water for 1 hr and drain. In an earthenware pot, combine the rice and 2c of water. Bring to a boil.
3. Uncover and add the sliced deodeok. Reduce the heat to low and cook for another 10 min.
4. Garnish with 3 chopped scallions. Drizzle 1T of perilla oil.
*Deodeokgui
1. Pound 2 deodeok roots with a rolling pin and slice lengthwise.
2. In a bowl, combine 3T puréed onion, 3T of red chili paste, 2T of rice syrup, 1T of sugar, 1T of sesame oil and 1T of Korean red chili flakes to make a marinade.
3. Coat the sliced deodeok with the marinade.
4. Heat up a pan with 2T of cooking oil over medium heat. Place the marinated deodeok. Switch to low heat and cook for 2 min on each side.
5. Break up 1T of pine nuts with mortar and pestle. Garnish.
