RECIPE - The Best Corn Pudding I’ve Ever Had!
Ingredients:
½ cup butter, softened- plus 4-6 Tbsp more to grease baking dish
½ cup granulated sugar
2 large eggs at room temperature
1 cup full fat sour cream
1 package (8½ ounces) cornbread/muffin mix (ie: Jiffy™)
½ cup whole milk
1 can (15 ¼ ounces) whole kernel corn, DRAINED
1 can (14 ¾ ounces) cream-style corn
Directions:
1) Preheat oven to 325℉
2) Grease a 3 quart/ 9 X 13inch baking dish with 4-6 softened butter.
3) Open can of corn and drain in colander. Open cream-style corn- do not drain.
4) In a medium mixing bowl, cream ½ cup softened butter with ½ cup granulated sugar using a hand mixer until light and fluffy- about 5 minutes.
5) Add 2 large eggs one at a time, mixing with hand mixer after each addition.
6) Beat in 1 cup of sour cream, scraping sides to incorporate all ingredients well.
7) Gradually add corn bread/muffin mix alternately with ½ cup milk in several additions each.
8) Add the drained whole kernel corn and the whole can of cream-style corn; fold in thoroughly until well mixed.
9) Pour batter into prepared baking dish
10) Bake at 325℉ until set and lightly browned, ~ 45-50 minutes. May need to cover with foil if over browning.
Enjoy warm or cool, for breakfast or as a side dish, or even as dessert!🤗
