Some tips:
1. Use granulated sugar for a more stable meringue
2. If your almond flour is too lumpy , you can use a food processor to make it even finer
3.When youre piping, pipe at a 90° angle for better control over the batter
4.Use a template, especially for beginners
5. After piping, you should tap the macarons 3 to 4 times , so they can spread evenly and release the air bubbles
6.Use a toothpick to pop the air bubbles trapped on the surface
(7. If you want to color your macarons, use powder or gel food coloring in order to avoid extra moisture in the batter from a liquid food coloring)
very basic tips
Love your videos! I could totally smell them! I could just live on macarons, croissants and everything French! Merci beaucoup pour cette video! Je l'aime! 🇨🇵👍👌😊❤️❤️❤️❤️
I love your show. Used to work for a French company and been there many many times. But, I've never been inside the kitchen of a boulangerie. Please show more of bakery. That's the best of French ( in my opinion).
which company did you work for?
Thay look so cool good job
Great video. I just wish you did more of these- showing French artisans doing their work. Of course I especially love baking!
I loved this! You did so well piping them. That little flick that he does when he finishes I find difficult to do. Thanks for posting this!
Yum!!! Thank you and Ronan for the lovely video! ;)
When I heard macaroons, I immediately thought of the ones made with coconut 😜.
It's cool to see how macarons are made by a French chef!👍
Thank you for letting us into the world of French baking. Attempting to make macarons looked intimidating but now I can see it is pretty simple .Love your channel. You are now our official liaison. ❤
@Oui in france Do you have any measurements for the egg whites, powdered sugar and almond flour . Thanks
This was a breath of fresh French Spring Air! Thanks, Diane. What a wonderful video. You excelled at your efforts. It's so good to see you again. Salut!
I ❤ strawberry and would love to make these in that flavor.
cappucino flavored macarons!!!!!! I never knew how to fill a pasty tube before!! amazing!
Love this! Delicious! Pistachio is my favorite.
Thanks! It’s great seeing how a professional makes macarons. I cannot choose a favorite. I love the pistachio ones and the fruity flavors equally.
It looked like you were having so much fun! Thanks for sharing 😊
Macarons are our favorite. I love treating myself to these on a Sunday afternoon. Delcious
I loved this Diane! And I didn't know they use almond flour to make them - that's great as almond flour is now my go-to flour. You have inspired me to (maybe :-)) try my hand at making these. Being in lockdown mode has me baking more already, so why not step my game up a little!! Don't laugh at this - the first time I was planning to visit France, about 10 years ago, some friends said I had to try French Macarons. I thought they meant the chocolate covered coconut macaroon, but I quickly learned otherwise. Haha. My favorite flavor is chocolate, but I don't think I've ever tasted one that I didn't like. Thanks for creating and posting this. Keep them coming - love your videos!!
Thank you for the instructions. I will fo them as soon as we can get eggs again....
Wow. As soon as I saw this in my news feed, I clicked on it instantly. I love your videos. Keep up the good content!
This was super cool, Diane! I always wondered what was in the outside of the macarons. Also love your new intro animation!
I'm a newbie here on this channel but enjoying everything so far. It was wonderful to see how Ronan made his macarons and I appreciated the careful instructions. (ie pushing his thumb down into the pastry bag- GREAT info.). Merci and may you have a happy and healthy New Year. (🇨🇦)
What a brilliant video. I never realised just how much work went into producing quality macarons. You macarons looked just as good as Ronan's.
Lavande, c’est mon parfum favori!
Thank you for the video, and the macarons looked wonderful.
I was taught a different technique - whipping the egg whites with sugar and sugar syrup, and not just with powdered sugar.
And the filling was so simple!
I'm going to incorporate a few new techniques when I bake my next batch!
Merci beacoup et salut !
Loved it so perfectly instructed
i love these videos
I first saw macarons in France many years ago(and never tried one!) but I never knew how they were made. Thanks to you, now I know...and definately need to find a shop that sells them!
OH, fun. I will have to try that trick in filling the pastry bag. I have not tried to make them at home, but I should. They are so expensive! Thanks, Diane and Chef Ronan.
My favorite flavor is rose. 🥰
Just what we need right now! :)
Now, I’m going to make some macaroons! Inspiring!
I REALLY enjoy your videos (from Raleigh NC)! I am selfishly going to say, I wish there were more videos! I think I have watched all your videos, except this one. I have never been to France so I love watching you. You are so friendly and energetic! You are engaging and very interesting. Thank you for taking the time to make these. I have 2 French lady friends (met by accident on a French penpal site years ago) 1 in Tarascon and 1 in near Toulouse so I love to learn about France. Thank you!
Thanks Susan, you're so sweet to leave a nice comment like this. Appreciate you!
Great video! I love France ❤️. My favorite is raspberry!! Thanks 👍
How much fun was that?! Thanks for your excellent content!
Video is terrific! I always thought macarons were so difficult to make but you proved to us they are not! I'm going to try it and by the way the pistache (pistachio) is my favorite. Thank you.
same here. I thought macarons were difficult to make it at home for to get it right!
and my favour is the same as yours although I would never say no to any of them as all of them is just taste heavenly good. All of them !
Great video, I have made them a few times at home.
That is an awesome video!! I make my own in the US as I've not found any that were consistently good around me. I love making them- I find the process meditative for me. :)
Last time I was in Paris I bought some macarons to bring home to Canada. I opened up the box when I got home and saw the most beautiful rainbow array of crumbs I'd ever seen. Yes, I cried.
They are very fragile cookies! I have always brought them home in my carry on bag or even just carried them in my hands with no issues.
Thank you so much for the video! This is very insightful ^^
Wow....now that made me hungry lol
You content is very different from rest of the stuff so please continue with it. I see you growing millions. ❤️love from India
What a treat, Diane, in all sense of the word! Thank you and stay well and safe!
Great video. Loved it :)
Conținut bun. Je vais essayer ça à la maison, apprendre à cuire.
I just tried to make macarons for the first time using a recipe which I found online. It turned out pretty good, but not so perfect. This video is very helpful for me as I want to try again. I lover your video about boulangerie, too!
It is the same here ! I NEVER HEARD ANYBODY DO IT AT HOME WHO COULD GET IT PERFECT.! NEVER SO FAR !
I hate to choose I love them all. Maim!
So 😋 yummy
raspberry rose flavour is an amazing macaron.
Hi Diane, love this video. Please do a video about what it was like to first move to France. We are thinking of retiring there and would love any "heads up" you can offer.
Hi there, so happy you enjoyed the video!
I try to keep my UA-cam channel viewer focused for the most part (tips, a look into French life, etc.) but I have written a bunch of personal blog posts on what it was like moving to France, adjustments, etc. so let me link them below in case they'd be of interest:
www.ouiinfrance.com/reflecting-on-5-years-france-expat/
www.ouiinfrance.com/whats-surprised-me-the-most-about-my-life-in-france/
www.ouiinfrance.com/little-differences-about-life-in-france/
www.ouiinfrance.com/living-abroad-experience-is-not-one-size-fits-all/
Something that I always point out to people is that so many factors influence what life abroad will be like for someone and no one's experience is going to be like anyone else's. So things like if you come as a single person or not, in your 20's or 70s or somewhere in between, if the move is temporary, if you speak the language, if you work, if you come with a bunch of savings, if you live in a big city, etc. All of these variables will influence someone's life in France. I'm happy to answer any specific questions you have, though, so always feel free to email! And maybe I'll do a Q&A if people have other questions. We're on lockdown nationwide so I have a little time. ;-) Thanks again!
I absolutely love French pastry! Only downside of the video is we are unable to try what is made.
Hi daina how are you today you made nice video macaroon wish you all the best bye good night
Nice video
❤️❤️❤️❤️❤️❤️❤️❤️
I'm glad you made this video, its important to see what ingredients go into food. I've never heard of macarons, but I don't think I could ever eat them. I am deathly allergic to egg whites, they make me rapidly swell up, while turning my skin red, giving me a rash and making it difficult to breathe! The more I learn about French cooking the more terrified it makes me, if I ever go to France, I would not know what to eat!
Just say you're allergic to white eggs and the waitress will tell you what you can eat, and what you can't.
Not so complicated.
Great video. I wonder what are the measurements of the incredients?
Looks wonderful, I learned some techniques but what are the measurements?
These look so yummy!! Are they available in the USA??
I understood that you had to bang the tray before baking to get the 'foot' to form, I didn't hear him mention that.
banging the tray helps get some of the air bubbles out
Full Recipe would be nice. Im not too good at determining how many cups of flour by eye!
My goal is to learn to.make macarons. I've attempted a few times and they've turned out ok but still learning. Did he use confectioners sugar for his meringue? Every recipe I see online calls for granulated or castor sugar for the meringue! Thanks!
HE USED POWERED SUGAR not granulated - EVEN LESS CASTOR SUGAR !
Where can I find the measurements for the ingredients please?
Hi Dianne i have tried macorons before and I really like the taste of them how do I get a job at the French macarons place in France?howdo I apply for work?
Hi, I’ve been looking for a video like this for so long! I can’t see to find the recipe though.... I’ve always used granulated sugar for the merengue and powdered sugar for the almond flour sugar mix... I was hoping you could clarify and share the recipe if possible! Warm hugs from Michigan!!!!
Je suis curieux une journée type au Michigan c'est quoi 🤔
hey where can we get the recipe?
Bless you for this series of bakery's and all other one as well. I DO WANT TO LEARN TO MAKE MACARONS. THAT IS THE 'CREAM' OF ALL EUROPEAN BAKERY SHOP. in the price wise too unfortunately.
No granulated sugar in egg whites? This is a different recipes compared to what a lot of ppl use now. Ty
I’ve never had a bad one.
Pretty sure our trip to France in May is going to be cancelled ;(
Is almond flour the same as ground almonds? Great video but it’s far too fast. Need to slow down.
it's the same, finely ground.. You can control the speed of the video by clicking on the little cog icon. When I am listening to lecture I speed it up 1.5 times but when I'm trying to pay close attention I sometimes reduce to .75. Hope that helps :)
Well, I think I’m in love. Ronan is seriously hot and those homemade patisserie! Mon Dieu! Vous avez de la chance!
Your videos are great, especially the ones about speaking with confidence... 😉 I can read and write really good in france, but speech is a bit of a problem. I studied franch and englesnin school. English is my second language, but I am much more confident while I speak English, it is much easier. As far as franch language goes, I have the same problems that you speak about in your videos, and your tips definitely help. I wish I had seen your video before my trip to france 😂 anyway great content, best wishes from Montenegro 😊
Hi. I'm from Brasil and my children adore it macarons. We like this recipe It seens to be easy . But I don't find the recipe .Dear Diane, could you send me this recipe, please!!!
Hi there, I replied to your email. ;-)
Ok, I love these videos, but whenever she talks over the food, I get so mad! And my favorite flavor between Vanilla, Raspberry, and Pistachio, it would be Pistachio!
Beat the butter into a pommade. What is that?
A "pommade" is a cream that you put on your skin when you have pain.
Butter "en pommade" is a creamy butter. Not melted in a pan. Just kneaded to make it soft enough to incorporate it into something else.
Come un francese canadese ho capito 90% ma il bake non mostra mai per sollevare e rilasciare il vassoio per ottenere l'aria
Where’s your recipe
OMG, Dianne, where have you been? I missed you
Thanks, you're sweet. I'm a little more consistent on my blog because I can write before or after work, but when I do a video like this it takes a bit of organization with the person and then finding a time, so just trying to do my best. Thanks for watching!

so even in the real business setting, they didn't make them to perfection.
your recipe is useless without the amount of ingredients, not all of your viewers are clairvoyant
no need to be rude. it wasn't a "cook with me" lesson. It was just showing you a French pastry chef at work
honestly, your macarons do not have nice feet and the look very hollow and underfold. I also wonder that you use powdersugar for your meringue rather than sugar. Also the filling is very little compared to the macarons I have seen at Laduree or Pierre Herme and done myself since many years. I do hope the macarons taste better than they look like.
great job
but you do not respect hygiene
Hi there, not sure what you mean. This was a private cooking class for me and everything was for my personal consumption, not sold to the public.
