Hi, this is Aarin again with the usual quick translation for those who don’t understand Cantonese well. Remus is cooking a dish for the winter solstice day, which is a braised pork dish. The ingredients are pork belly, black peppercorns, star anise, cinnamon, bay leaves, brown sugar pieces (cane sugar), spring onion (the big ones), and ginger. For the rest, he adds shaoxing wine, salt, dark soy sauce, light soy sauce, oyster sauce, white pepper and small spring onions. He said it’s not easy to find the ideal type of pork belly he wanted since he didn’t specially reserve for any, but since it’s impromptu and home cook dish, it’s fine. The water he started to put the pork and ginger with is at room temperature or cold, not hot or boiling. After he took it out, he rinsed it with water (not shown on video) to clean it, and then cuts it in big chunks. Just a bit of oil will do as the pork belly has a lot of oil. Then he adds all the ingredients and water. He said best is not to add water mid-way of cooking because braising is best to have extra water at the start to let it reduced. He said a dash of white pepper can be just a bit, but is really up to you or your common sense, if you don’t even know what’s “a dash” or” a bit of”, then don’t cook, haha. Cover the pork at lowest flame, about an hour. He forgot to buy tea bag to put in the spices, otherwise he would have used it, so he had to sieve them out. Then on high heat again to further reduce the sauce. He adds more dark soy sauce for better color. On a previous video, there’s a method where he cooked the pork with sugar first, so you all can take a look at that as well to apply for this dish too. He serves it on a small claypot and garnished it with spring onions.
