George Dickel makes whiskeys that I really enjoy at a very reasonable price point. And I am an Ardbeg 10 year single malt fan saying this. It is great to hear what happens when you let their products air out for awhile. My experience exactly. The master distiller, Nicole Austin, has done a phenomenal job in Tullahoma TN at Cascade Hollow. I think her 8 year old Bourbon is a masterpiece. It is rated at 93 on Whiskey Advocate. But the #12 Superior Recipe, now wisely rebranded as the Signature Recipe, is my favorite whiskey at their very reasonable price point. Maybe the best whiskey for the price to be found.

As a historical side note: During the Prohibition years, only George Dickel was allowed to be prescribed by doctors as a medicinal remedy due to the almost total absence of seed oils in the product. That chilled filtering removes the last traces of the waxy corn oil residue from the whisky.

Actually, there were six distilleries licensed during prohibition. George Dickel & Co. moved its operations to Louisville's Stitzel-Weller Distillery, where it continued to produce whiskey even during national Prohibition using a medicinal license.

Jason- I watched this and bought a bottle of the 12 today. I have to say it is pretty darn good for $23 in my area (Indy). I got a VERY, very faint whiff of the "minerality" (1st glass) but it dissipates and I am enjoying a nice woody/vanilla/maple/spice taste. Goes down easy and that peppery finish indeed lingers. TY for the review and recommendation (not sure if it still stands 2 years later). I'd always passed on GD but now will try some of the other types. Happy Holidays.

  • @neilolsen2034
    @neilolsen2034 5 років тому +1

Hi Jason, I 100% agree with you on all counts. You do need to add the Dickel hand select barrel 9 year to your collection if you can get access to it. It is less oaked than the BIB, but higher proof at 104 and nine years old. I picked that one up on a whim here in Georgia and did exactly as you described. I immediately drank 3 or 4 drams and put it away as I felt it was average. A few weeks later I pulled it back out as a starter to my flight for the night. All of a sudden, this was a really enjoyable whisky. It really got to me. I got butter, buttered popcorn, and caramel on then nose and the palate finished in this really enjoyable honey roasted peanut. Since then I have tracked down the BIB when I was in TN and noticed last week that it has now hit the shelves in GA. The next time you go back to the BIB, see if you can fined the tropical fruit notes and toasted coconut. I agree that it is oakey. It is also complex for a bourbon. I usually have to get to scotch to get something that changes and has multiple notes like this one does. Everyone should set aside their preconceived bias to TN whiskey (which I definitely had going in) and give these an honest shake. As you stated, the neck pour will fool you so you have to give it time. If you cannot find the hand select barrel, hit me up. I may or may not have stockpiled a few bottles ;)

    • @TheMashandDrum
      @TheMashandDrum  5 років тому

Hey Neil! Wow! You totally nailed the tropical note. It was coming through to me as a cherry in the review but yes..there is this tropical juicy fruit type flavor to it. The mineral flavor has definitely turned into a honey roasted peanut. I can get the Dickel barrel select here so I will definitely we grabbing one. Cheers and thanks for your feedback and tasting notes.

My local liquor store got 6 bottles of the BIB in and I snagged one of them. Delicious. I guess my palate isn't sophisticated enough to pick up the Flintstone vitamin everyone talks about. I don't pick that up at all. My favorite whiskey for the last couple of years has been Michter's American. I did a blind taste test with the Dickel BIB three separate times and it won every time. I will definitely grab a bottle whenever it is available in my are. Great review.

Superior 12 was super cheap at my local store so I bought a bottle. I got a strong cherry and foeder aged sour beer aromas on the nose, which was amazing. The Flintstones vitamin flavour was pretty prevalent, but started to dissipate in my glass while I sipped. I hope it dissipates in the bottle as more air gets into it! There were some great flavours (the custard and vanilla that you mentioned) underneath that I suspect will be more prominent if the mineral quality goes away.

The advice to not judge a bottle on the first pour applies to just about all whiskey. Except the ones you happen to love instantly (which sometimes may end up boring). But for me a number of whiskies I initially hated, became favorites. No pain - no gain. Many worthwhile things in life are an acquired taste.

Jason, Great background on the Dickel. Always like to hear stories how liquor was sold as medicine. "Mellow as moonlight" reminds me of Kessler's "Smooth as silk." So all 3 are technically bourbons that they like to then call Tennessee whisky. To me, the Lincoln process of soaking rather than dripping thru the charcoal makes more sense. By the way, I keep enjoying your special shaped glasses, with the curved bourbon glass (used for water in this video) my favorite and the Canadian glencairn a nice change of pace. The # 12 sounds like great competition for Jim Beam and maybe Buffalo Trace at around $20 to 25. CHEERS!

BUT, someone please explain to me HOW a whisky that's " chill filtered" AND " charcoal mellowed" AND in a barrel 5-7 years can come out SO HOT? 🔥It makes no sense. It should easily be in the top 20 in whisky sales in the US with all the effort that goes into it, and no one can tell me Canadian Mist, Southern Comfort, and Seagrams makes a better product! And they out sell us 3 to 1. Frustrating!

I had high hopes for the BiB but it’s a little too dry and heavy oak flavor for me. Good value if you’re into that though. The Rye is pretty good too.

    Hello Jason:
I enjoyed this Side by Side. I enjoy George Dickel's expressions, to my nose and palette, there is a Sweet Corn note in George Dickel expressions, probably due to the 84% Corn component in the Mash Bill.
    Here are my Impressions
    SLÁINTE
    Mike
GEORGE DICKEL # 8 Tennessee Whisky
    8/6/19
    40% ABV NAS
Said to be 4 to 6 years old
This is my Second Sitting with this whisky
COLOR: Amber with many legs running moderately
    NOSE: Sweet Corn Syrup
PALETE: Medium Mouthfeel A dry corn note, which becomes a bit sweeter as I roll it around in my mouth. There is also rising alcohol burn, but it is mild; a drying sense comes in behind it.
FINISH: Corn Sweetness going down followed by a puckering drying sense
With one drop of Spring water
    NOSE: Sweet Corn
PALETE: The mouthfeel is thinner and there is more dryness and less corn sweetness
FINISH: Very Peppery with some sting on the tongue followed by a Drying
The legs on this glass neat promised something that did not come through. The mouthfeel was medium neat, but I was hoping for a little more. There is that Corn Sweetness that I enjoy in George Dickel with its 84% Corn in the Mashbill, but not as sweet as the #12. There is a young sense to this whisky and it is. The mouthfeel is thinner at 40% ABV.
I really enjoy the #12 and I just got the Bottled in Bond and I enjoy it as well. I recommend either and the 12 is widely available.
GEORGE DICKEL NO. 12 TENNESSEE WHISKEY 9/11/16
NAS Mash Bill 84% Corn 8% Rye 8% Malted Barley (Whiskey Jug)
As is my Habit, I let it Sit 2 hours while I did various things.
COLOR: Amber Brown with Nice Legs moving Slowly.
NOSE: Interesting Rich Brandy Notes upon opening the Bottle. These Continued in the Glass; followed by Rich, Sweet Caramel and Vanilla with Hints of Barrel Char. The Vanilla and Caramel Come forward in the Nose after my first mouthful with some Barrel Char underneath.
PALETTE: Sweet Caramel and Vanilla Arrival with a Rich Creamy Mouth Feel. Pepper Rising as I Swirl it; in addition to, Nice Wood Smoke and Charcoal notes almost sweet interestingly.
FINISH: Spicy and Drying with the Creamy Mouth Feel lingering and still that touch of Corn Sweetness.
I am enjoying this Whiskey! A Pleasant Rich Sweetness with a nice mix of Spicy Notes. The Charcoal Notes are well integrated and add Complexity to this Tennessee Whiskey. This is my Second Dram and I liked my First. The air has done good things to GEORGE DICKEL No. 12. The Brandy Note was a Pleasant surprise.
GEORGE DICKEL Barrel Select Tennessee Whisky
43% ABV, Double Distilled and Charcoal Mellowed
Distilled once in a Column Still and once in a Pot Still (The Whiskey Jug)
    Chill-filtered
Mash: 84% corn, 8% rye, 8% malted barley 10-12 yrs (The Whiskey Jug)
COLOR: Medium brown shading slightly orange. Nice Ring with many legs running moderately.
NOSE: Rich sweet caramel, corn sweetness with wood spice notes underneath. There is also a cola note somewhere in the mix.
PALETTE: Light Corn Sweetness a bit like candy corn with caramel and charcoal spice notes mixing creating a nice medley. The mouthfeel is creamy and coating with a medium viscosity.
FINISH: Charcoal with sweet corn edges going down with a light pepper filling my mouth; resolving to a dryness with a cream corn sweetness
With 1 drop of Poland Spring Water
NOSE: Airy sweet corn note with wood char lightly in the background. The wood char note is absent from later nosings leaving an airy corn sweetness
PALETTE: Light sweet corn arrival with notes of popcorn, even a slight saltiness quickly followed by spice and a drying sense. There is light caramel as I swirl it with wood char mixing in. The light caramel reminds. The mouthfeel is lighter and less creamy. It too has an airy quality.
FINISH: A toothpaste sweetness going down. Light spice rises; resolving to light wood char mixed with cream corn sweetness.
With 3 drops of Poland Spring water (an extra drop went in)
NOSE: A mixture of Corn sweetness and light wood char. It is overall a sweet note.
PALETTE: Light sweetness with spice rising from my tongue. There is a drying sense as I swirl it around with light sweetness around the edges and spiciness mixing in with a light wood char note there as well.
FINISH: a mixture of spice and sweetness with light pepper on my tongue resolving to an airy corn sweetness. There is a grainy sense on my tongue.
I enjoy this whisky. There is a nice combination of corn sweetness and wood char note. The wood char note is even sweet around the edges; which results in a very nice complexity. The wood char note is more prominent than in bourbon which makes it different to my tastebuds, but there is always a corn sweetness somewhere to prevent an overall charcoal taste. In addition, I found the airy sweetness with water very pleasant. Highly recommended!
GEORGE DICKEL 13 yr. old Bottled in Bond Tennessee Whiskey
    50%ABV
Mash bill: 84% corn, 8% rye, and 8% malted barley,
    7/9/19
Left the whiskey sit in the glass for 30 minutes to open
COLOR: Mahogany with many legs running moderately
NOSE: Mild wood char behind creamy vanilla, with a corn meal note floating around.
PALETTE: A nice merging of vanilla and wood char with a slight tingle from the alcohol, neither dominates. Medium mouthfeel
FINISH: Drying which resolves to a sweet butter note on my tongue
With 1 drop of spring water
NOSE: Corn sweetness with a thinner vanilla note
PALETTE: Light corn sweetness followed but drying and tingling on my tongue, a medium mouthfeel remains.
FINISH: Sweet corn with drying and a tingle on my tongue; resolving to a dry corn note, then a complete dry sense
With 2 drops of spring water
    NOSE: A candy sweet note
PALETTE: A light sweet note followed by drying and tingle on my tongue
FINISH: Sweet corn followed by a cotton mouth dryness.
I really enjoyed this Tennessee Whiskey neat. The corn meal note in the nose was nice. The sweet butter note in the finish is something I have not experienced before and it was very pleasant. The mingled Palette of vanilla and wood char with nether taking center stage created a complexity that I enjoyed. I was concerned that at 13 years the wood char note would begin to dominate, but I was proved wrong. I expected a richer mouthfeel at 50% ABV. The candy sweet note on the nose with 2 drops of water is another thing I liked! The 84% corn percentage in the mash bill allowed the corn notes to come forward and show a sweeter side to aged corn whiskey. Highly recommended!!

This is an amazing breakdown and very similar experiences to what I had. It is very corn, caramel and vanilla forward. The charcoal and mineral characteristic do give way to some nice peanut and floral notes. I would sip the 12 or the BiB any day of the week. thanks so much for your breakdown..I love when a viewer does this. Cheers!

Jason, how could Nicol have been distiller of the BIB as she has only been with the company a little over a year now?

    • @TheMashandDrum
      @TheMashandDrum  5 років тому

George Dickel Bottled In Bond meets all of the criteria by being distilled at Cascade Hallow Distillery in fall of 2005 and stored at the distillery for 13 years. It was overseen by one distiller. But she chose the barrels that were bottled that met the flavors she wanted. So although she didn't distill it, they say her fingerprint is on the release since she chose the barrels over the last year or so before release.
