If you love coffee, make sure to make this cake.
Ingredients for Korean sugar candy:
150 grams of sugar
50 grams of water
baking soda 1 teaspoon
Do not stir until the sugar caramelizes around the pan.
Place candies on parchment paper and let harden for 30 minutes.
Ingredients for the crust:
Patty bour Biscuits 200 grams
100 grams of butter
Press the biscuit and butter mixture completely on the bottom of the mold and leave it in the refrigerator for 30 minutes.
Ingredients for the cheese layer:
3 tablespoons of gelatin powder
A quarter cup of cold water
Mix together and put it on the steam of the kettle until the gelatin becomes clear.
Sugar 2 tablespoons
2 tablespoons of instant coffee
A quarter cup of warm water
Pour into the blender and mix completely until it foams a little.
Mascarpone cheese 200 grams
Breakfast cream 200 grams
A quarter cup of sugar
Mix the cheese and sugar for a minute and add the cream.
Mix the ingredients thoroughly, add coffee, sugar and water, and then the gelatin becomes clear.
Crush the sugar candies, set aside the larger pieces for decoration and fold the small pieces into the cheese mixture.
Pour the cheese mixture on the biscuit layer and refrigerate for 3 hour.
mold size 22 cm
Then decorate as desired.
I use pastry cream and pieces of korean sugar candy to decorate.
