      That's why Adobo is a staple in Filipino households, it's very tasty despite how easy it is to make, unlike a lot of our other dishes which are complicated. Those are usually only served during festive seasons.

      Bro whenever I feel uninspired to cook, I just let 2-3 kilos of chicken marinate for days in the fridge. Cook it whenever I please. The longer it stays, the more flavorful and tender the meat gets.
      Adobo is the goat of Filipino food.

    To level up your adobo once cooked take the chicken out to crisp it by putting it in air fryer or grill or fry it in a separate pan of with a bit of the oil you skim off or a high smoke point oil and leave the sauce to reduce til the sugar and collagen from chicken bones reduces to a sticky consistency then slowly add the sauce back in a little at a time to the pan or just take grilled chicken out and pour the sticky goodness over chicken and rice it is bloody delicious.
    ** careful not to over reduce the sauce it the line between a great sticky sauce and over salty sauce is thin but if you accidentally do just add water and or splash of vinegar.
    Also if you want to make it tastier and “healthier” just add 1/2 teaspoon sugar instead or monk fruit sweetener, increase the ratio of vinegar lthen grate a little ginger in the marinade and add 1 teaspoon of ground turmeric. I also don’t bother with onions like many filos but that’s just personal preference. Everyone has their own way and preference of doing adobo so just know you can play around with it and get something just as delicious but different.

LOVE IT... lots of garlic, lots of vinegar (remember not all vinegar is created equal and I like mine vinegar-y), peppercorns, soy sauce, bay leaf... you got it! You made the wet kind. My mom would make dry kind and a wet kind. I've never been able to perfect the dry.

    Love this variation of adobo, it stays mostly accurate with a bit of a twist 💃🏻 i have to try this sometime!

      I'm curious..... What is the twist??? That is how adobo should be cooked.... The meat is marinated first in vinegar, salt and spices with soy sauce as an optional ingredient. After marinating, the meat is browned in oil He actually got it correct. That is how we cook adobo as passed down to us, especially me, by our Lola. And based on books from the 1600's (now in the Spanish Royal Library in Madrid) written by Spanish chroniclers that is how our ancestors cooked adobo....the meat was marinated first. In that same book is the origin why our dish is called adobo with the native name now lost. The Spanish chronicler called the dish as "adobo de los naturales" which means adobo of the natives as opposed to the adoboof Spain which uses different spicesand herbs but no vinegar. Proof also that our adobo predates the arrival of Europeans in our islands and thus is an authentic Filipino dish. And that adobo de los naturales had no soy sauce proving that soy sauce is not an essential ingredient of adobo but merely a variation.

    I'm Filipino and I'm a purist when it comes to Filipino food. His method of cooking is actually correct...it is the correct process. Marinate the meat in vinegar, salt and spices and, in this variation of adobo, soy sauce. I would have preferred that he used more vinegar and less soy sauce. After marinating, the meat is browned in oil. The brown layer at the bottom of the pan after browning is not discarded but deglazed using the chopped onion. When the onion is slightly browned I would have added the garlic and browned them too as this add another layer of flavor. ...instead of just being added in together with the marinade. Add the browned pieces of chicken and simmer. Halfway through cooking taste the sauce/gravy and adjust the taste accordingly by adding salt, sugar, freshly ground peppercorns as needed. If the chicken thighs are already well cooked and there is still too much liquid, remove the meat and continue simmering the sauce until it becomes thick and oil starts to separate from the gravy. The chicken thighs can be returned to the pan at this time and briefly braised in the gravy. Done. Turn off the flame. For the adobo to fully develop its flavor itbis better to keep the pan covered and set aside and serve it the following day...or even after two days. Adobo tastes better a day or two after it is cooked as compared to being served immediately after cooking. More importantly it should always be eaten with rice, especially with garlic fried rice.

    How about putting more garlic, and more vinegar? Less soy sauce, and use sprite instead of water? My mom’s trick so the sugar from the sprite is what you’ll use instead of adding sugar. It also helps to tenderize your meat.

    Try this next time.
    Double fry technique.
    After the adobo is cooked. Take all the chicken and pan fry again till it forms a slight crust on the skin.
    Keep turning to form as much crust on the chicken - that's if you can stave off your hunger.
    Place together on the adobo sauce. Enjoy!
    You could add more garlic or mince them to bring out the garlic smell and flavor...

    We filipino usually marinade it with bay leaves, soy sauce, vinegar, black pepper, brown sugar, minced garlic (no need to peel it), and some seasoning (like Ajinomoto or Magic Sarap but it's optional). Leave it overnight. Then you can make it as Adobo or BBQ the next day 😋

    Use a mix of soy and dark soy for a deeper color and you need much more than a splash of vinegar. Rice wine vinegar is also a better choice.

    I was taught how to make this dish from a Filipina friend who came here from the Philippines and she taught me that the chicken don't get marinated and to saute the garlic until it is golden brown in color first, then add the onion and saute until it's translucent and she told me that sauteing it like that is the secret to this recipe because it gives it a certain flavor. After that, brown the chicken then flip it, cover it and let the fat sweat out, flip it again and let the fat sweat out some more then add the rest of the ingredients and let it simmer. Without doing that, you can't get that specific flavor that sauteing the garlic until it's golden brown gives the dish.

    I use sprite instead of sugar/water, and usually apple cider vinegar or cane vinegar (that swan brand for vin and soy sauce. My wife adobo is lit af and no restaurant compares so far

    The Philippine Adobo before the Spanish colonization of the Philippine was only consist of the meat(chicken or pork ) coconut vinegar, salt and garlic. It later added soy sauce because of the influence Chinese trading with the Filipino.

    For a twist, you can add some chicken liver in it. Saute the liver in diced garlic until cooked halfway. Add the cooked liver about 3 minutes before you turn off the stove.

    Looks pretty good. But maybe next time try browning the chicken with the onions and adding the vinegar at the very end. No kikoman soy sauce. If you can use Silver swan soy. Sprite or any kind of lemon lime soda is a must but me personally I like using coke because it adds an amazing sweetness to it.

    Funny note about adobo: Spain's dominance over the southern hemisphere created a history is written by the winners scenario where adobo is accredited to them. However recent discoveries have resulted in people thinking adobo started in the Philippines first and Spain copied it and took credit. Spain also stole some braising recipes from Mexico and those influences are now so ubiquitous to their cuisine they're considered classical Spanish.

    The sauce that my dad puts on his adobo makes it RIDICULOUSLY DELICIOUS. It’s like a pineapple sauce that gives the adobo a sweet flavor, yet it still keeps a hint of it’s original taste.

    Absolutely perfect! You are good. This is how we cook pork or chicken adobo. So easy and simple to prepare and cook, right? I don't understand why other's make it too complicated.

    The Chinese who visited the Philippines introduced soy sauce to early Filipinos, we call it Toyo or soy sauce from the Chinese word Douyou
    It soon found its way into our nameless vinegar-braised dish, eventually displacing salt altogether.
    While our adobo shares its name with a couple of Hispanic dishes, there are key differences between the Filipino version and its Spanish and Mexican adobo.
    The Spanish adobo sauce is distinctly spiced and fiery, with at least three kinds of chili peppers, tomato paste, and cinnamon among its ingredients while the Mexican rendition uses lemon juice, cumin, and Mexican oregano.
    On the other hand, the Filipino adobo base is comprised almost exclusively of vinegar, soy sauce which not only flavors but also tenderizes the meat, and very similar chinese and thai way of cooking.
    Filipino Adobo is not related to Spanish or Latin adobo.

      Filipino adobo is just poor man's attempt on China's soy chicken or soy pork. Giving such an epic backstory is trying too hard for a dish that no one would want to see at a wedding or a bday party.

    The broth could have been a bit darker,you could have used less onions and you should have crushed the garlic but other than that looks pretty good.
