      Dr Bruce Lupton and MANY others like him are saying the SAME thing: we are undergoing a TRANSFORMATION. If you listen to the "news" you think the worsr, but in reality, GOD/planet is shifting so that we can all wake up and realize we are souls in human form. YOU/WE create your/our reality. Look up stuff on Sacred Geometry, parapsychology,, Dr. Glen Rein (Quantum Biologist). Things are not as they seem. People are nervous because of all the changes and the way some of that is being manipulated, but we need tp get rid of old systems/structures that have kept us in servitude.
      This is a time to manifest what you have always dreamed of and what you want to be.

    I've been doing this for years- it works beautifully. You can make buttermilk pretty much the same way. Just use milk instead of cream and add the buttermilk- set on counter for 24 hours. I usually do both at the same time.

    I am still catching up on past videos. This one scared me a tiny bit for about a heartbeat since leaving dairy in a warm place was hammered into my head to be dangerous. I then reminded myself refrigeration is fairly new and people survived without it for a very very long time. Someone might point out the average age people died without refrigeration, but there were so many factors in that time (not washing hands, for example) that you can't blame it on any single thing. I am really grateful to be able to learn from you and others. Bright blessings!

      I learned recently that store bought sour cream's 2nd ingrefient is modified corn syrup. I know i want to get that out of my refrigerator.

    I'm going to try this the next time a gallon of milk is getting older. We are a two-person household, (empty nesters), and a gallon of milk is close to the same cost as a half gallon. I figure the container costs are calculated in the cost. Thank you for sharing your knowledge with us. You are amazing!

    Mary, You are Fantastic. I've Watched your Videos for a Couple of Months Now and I introduced you to My Father bc He has Completely Destroyed his Stomach/Digestive System by Over using Antibiotics, Steroids ( Prednisone) and Other Medications. He has a Painfull Leaky Gut and Refuses to Admit that Nothing will Work, but more Medication.I''ll Keep Pushing for him to try the Bone Broth. Thank You for your Work!

      Tracey Marie Wade - Oh Tracey!! Thank you so much for visiting and sharing your father’s story. I understand completely. It can be very hard for some folks to make the transition from a processed food diet and more and more medication to a traditional foods diet. Now certainly there are necessary medications one may have to take, but oftentimes proper diet can help folks lessen their needs for certain meds. I am not a doctor and am only speaking from my own personal experience with myself, family, and friends but I have seen wonderful transformations in health and well-being when folks are willing to adapt a traditional foods diet. I always say...just start with a roast chicken. Encourage your dad to eat a nice piece of roast chicken, crispy skin and all. Add in some carrots, celery, and potatoes cooked with the chicken. It doesn’t need to be complicated. And, if time permits, maybe a bit of sourdough bread with homemade butter (preferably from raw cream if you have access to it.) All that and a mug of bone broth with a sprinkle of sea salt will have him feeling like a new man in no time!! Keep me posted on how everything goes!!

    Mary, i am a few miles south of Pennsylvania where the Amish live and am so blessed to be able to buy milk straight out of pastured Jersey dairy cows! The raw cream that i buy is beyond heaven!😍 I have to belong to a private association to be able to buy the cream as its only legal in PA to buy raw milk but no products made from it. (Eyes roll) one of the farmers makes yogurt with whatever fruits are in season in the summer. To die for!!
    Im going to try making my own sour cream and yogurt.

    You explain things so well. Great details and very good speed. I don’t know if this is on your spectrum but if I use raw goat cream for sour cream, I understand that I would just put the cream, alone on the counter covered for twelve hours and it will be sour cream?

    If you can't find cultured buttermilk you could buy the pasteurized buttermilk and take it to the museum, opera, and read it some Shakespeare and stuff. ;-)

    For someone who would discard the quart of buttermilk after 2 tablespoons were extracted, would using powdered buttermilk be a possible substitute? I appreciate learning that I can do 'homemade', and sometimes successfully!

    I enjoy your videos which affirm that I am not so odd creating simple healthy foods at home rather than buying from an industrial food factory. I love my fresh cultured milk products like sour cream, buttermilk, yogurt, butter, simple cheeses and my favorite; butter. It is so easy. I am blessed to have my own fresh raw jersey milk. Keep the cheerful work!

    Hi Mary, if I'm using heavy cream do I have to add buttermilk? I didn't get it correctly from the video. Thanks so much for the info. Today I made yogurt from your recipe. I had to culture it couple more hours longer to get the consistency and taste. But it came our great. Thank you!

    Hi Mary, I love watching your channel. I have a question, I made my first batch sour cream came great. Tried twice more and it would not work. I added extra buttermilk when it didn't thicken but nothing. I ended up making butter out of one.

    Hello Mary, I hope I'm not asking a duplicate question. Can I use the buttermilk from making butter? Would I culture it before using? What can I use the byproduct from making butter? Also, what can I do with the whey after making greek style yogurt?

      Hi Mary-Ann, All great questions!! Yes, you can use the real buttermilk leftover from making cultured butter. If you did not culture the cream first before making butter, then yes, you will need to culture your buttermilk first before using it in this recipe. As to the whey leftover after making greek style yogurt, you can use it in smoothies, to soak grains, in ferments, as the acid in your bone broth, and in place of water when making bread.     When I moved from Ohio to Danmark there was no such thing as Sour Cream here, I found Creme Fraisch and honestly I like it lots more than American sour cream, both are good but there's something about the Creme Fraisch that I like the taste and consistency better. We are fortunate to live just down the road from a huge dairy farm and the farmer is a wonderful man who sells his fresh milk on weekends, it's low pasteurized and delicious! I wish he sold cream lol.

    You definitely know your stuff. Curious i am wondering if you can take cultured butter , milk , buttermilk , yogurt and sour cream. Freeze those products with the intention of using them as culturing items. To make more cultured based stuff. Or does the freezing process kill the ability of any of the cultured based products to re-culture? For example if i took plain active culture yogurt and froze it could i use it in a year to culture new yogurt from milk. Basically i am looking for a way to preserve good cultures to save when i need them for making sour cream , yogurt , buttermilk , cheese,...etc products.

    Nice tips Mary. So if you freeze sour cream its best to be used in chocolate sour cream cake, and sour cream frosting, or Beef Stroganoff, or a casserole, rather than topping my taco or my chip. I need that kind of knowledge. Seriously. I've made sour cream with the lemon juice and was surprised with your recipe. I am sure yours is way better. Its really very easy to do and so much better for us I'm sure. Well done. Very inspiring. WIsh I had some butter milk right now. Haha.

    Failure = Success. Well Mary, used to make butter in my past but I have never made the cultured style. I gave it a whirle with raw cream. Well by golly after 2 days the darn thing would not churn to butter. Ive never had that happen before. Not all was lost I wound up with delicious Créme Frâiche.

    I rally love sourcream when i was in USA. But,here in korea we can’t easily found sourcream at all.and it’s really expensive too.Thank u for teaching me how to make sourcream.😊

    I went today to buy my keifer (love keifer)and double cream (35% fat). Also some vanilla sticks for my extract😃. But I have to check out a good quality vodka. By the way I'm writing all the way from Europe. So you have a new fan😉. I'm into low carb/keto recipes but I can always adjust certain ingredients.

    Lately I have made your ketchup and apple cider vinegar. I use the vinegar as I have always used the store bought vinegar and the
    ketchup is much better than anything I have ever bought. Sour cream was next.

    Thank you so much for the live broadcast. Personally, I love your cast's and have learned so much fron them. My 1st intentional bone broth was a failure. But I learned to not add too much water. So in that regard, not a failure at all. It was delicious and nutritious. You have inspired me to go back to the way I was raised. Cooking from scratch not a box or takeout. Thank you for reminding me that it is not only healthier and tastier, but more affordable too. If well thought out, it is really good fast food (leftovers).

      Once I learned about you, I was all over your stuff. You have so much to offer.
      I was raised in an old farm house with only a wood stove for heating and a old antique wood burning cook stove & oven for cooking. Hot and cold water in the kitchen only. Heated up water in kettles, pouring into a large metal container where we would bathe. Raised our own animals and planted our own ground. Canned all the time of we weren't out in the fields haying to feed the animals over the winter.
      I worked hard to get the country out of the girl and become cultured. It's funny how now I'm going back more to my roots. Everything was organic when I was growing up. At least in my world.
      Some of these things you teach us is old school, like the bone broth. We did it all the time but not intentional. It was just a part of making a good healthy stew or chicken soup. If it don't gel then you don't do it right. Anyway, that was about 40 years ago. Some of what you teach, we traded for.
      I'm more versed in the skinning, curing hides, making clothing out of leather and furs, gutting, cutting and wrapping. Curing meats and what not. Never could I kill, but once dead, I would thank the animal again for its sacrifice for us and them make quick work rendering the parts for use.
      I'm from the northwest raised in a very small village. Raised by a single mother and an absentee father. We struggled to survive and we did well.

    I know this video was older, but I have a question??? Can you use acidic whey in the place of the buttermilk??? From when you make cream cheese and then mix it with the cream for sour cream?? I'm thinking yes, because it is a culture also. Great video as usual

    I bought the yogurt you suggested that was made with 100% whole milk and did as you showed in your video with cheesecloth but after 24 hours no liquid but the cheesecloth was soaked, I left it in the refrigerator for another 12 hours and very little liquid in the bowl so, I went ahead and transferred to another container with fresh cheesecloth and have weights I use for my ferments and now it's been 2 days and I will see in another 5 if that worked. So my question to you is it ok that I went ahead and put it in another container without more liquid in the bowl? I did use a fresh cheesecloth? do you think it will work?

    it stays good for a long time as long as you always transfer it to a smaller container when it's about 1/2 empty.
    i used to pay around $5.50 for the container.
    but last week i went to pick up a tub and looked at the price and realized it had gone up.... the new price was $9.88!! i about died.
    i have to start making my own dairy for both the great health benefits and the savings

    🤗 Hi sweet Mary. Thank you so much again for another well explained video. I just want to confirm that I heard correctly coz I'm getting too excited 😱. I have access to raw cream here in the UK, and did you say all i have to do is leave it out for a few days and it will sour naturally??.... 😊😁😀
    Also when you spoke about adding Kefir to the milk, is that only for pasteurised milk? And can it be perpetuated once you've made it with a little of what was left?
    Question 3: whilst I'm here what water do you use when making vegetable ferments please? Filtered, spring, mineral.....?
    And finally, I normally use 1tbsp of salt to 1 litre (or 4 cups of water) for my vegetable ferments. if I want to start incorporating whey into this mix still with my one litre of water, how much would I need to put in please, i.e. 3.75 water and 0.25cup whey? I look forward to your response. You are my first port of call for anything fermented. Thank you for helping us all out with your knowledge. I'm looking forward to tackling sourdough bread next. 😋😉

      Great questions! Yes, raw milk was sour naturally on its own. You do not need to add anything to it. You do not need to add Kefir or anything like that. However if you have Kefir grains and you want to make Kefir , you can use your van milk. As to making ferments, yes I like to use filtered water or spring water that is free of chlorine or at least very low in chlorine. Chlorine can interfere with the fermentation process. And if you want to add whey to the ferment...for every quarter cup of whey you use, you will reduce the salt you use by half.

    Can you add a little of your homemade sour cream to a new jar of whipping cream to make more, sort of like the sourdough starter? Or should you just start fresh with new buttermilk? :)

    I like your videos just subscribed. Can i use buttermilk substitute for this recipe. And the percentage of whipping cream in quebec we have 35% is that the one or ten percent

      Great question. I don’t know if buttermilk substitute will work because it may not contain the good bacteria needed to culture the “sour cream”. Your whipping cream is the equivalent of heavy whipping cream - it’s perfect. Love, Mary
