You need an interface instead of a mixer. Just get yourself a Scarlett focusrite. The mixer isn’t giving you enough gain for your mic which is a dynamic mic not a condenser so it just needs more gain is all.

you dont need a new mic, the shure sm7b is known for beeing very quiet. Usually people use it combined with a "cloudlifter" to put in between ur mic and the mixer, this will boost the voice sound

With the Shure Mic, you'll need to get a mic-activator like a cloudlifter or a fet-head to get the gain needed to record with it if your interface can't boost it properly.

Instead of trying to get more gain out of your mic, drop the game volume. Same outcome. You can even bump the overall level of the entire audio file if you want it all to be louder with your voice being clearer

Regarding the audio issue, you could always set the levels just right for stream but record them separately on obs, that way, when you're editing you can adjust them accordingly. Cheers mate

run your audio through a proper daw first, put a gain tool on the output channel after running your vox through some eq/compressor stuff. most gain plugins can push way higher than 10db. That way you can push standard vocal LUFS into your vids/streams without cranking db in anything post.
