The green M&M thing in the rider isn't so much an urban legend, it's just a common business practice that managers would utilize to make sure the venue was on their Ps and Qs...if they took care of the one minute detail like getting the act a bowl full of M&Ms of all one particular color, you can then trust that they handled everything else that you've requested for the performance. Lots of rock bands had some variation of it...
For those who don't know, Bert was a rich kid growing up. He likes to play it off like his dad was a working-class guy. His dad was a lawyer for the church of scientology. Bert has always had the money to pay his bills.
The Van Halen green m&m rider thing is true. They buried it in the instructions for how to do their sound. That way when they showed up, if they had a martini glass of green m&ms backstage, then they would know the venue got the sound right.
The reason I heard for the "only green M&Ms" on the artist's rider was that if a venue neglected to provide such a specific request, it could in theory be reasonably assumed they neglected more specific needs from the artist or band like needing their equipment handled or dialed in a certain way etc. etc.
Except it turns out that someone is running around town that day trying to track down your random list of needs and can't actually get their real jobs done .

Apparently they had started incorporating a new lighting rig that was incredibly heavy and just wanted assurance that the people setting it up at a venue were paying attention to the details of everything. This was right when bands first started making and bringing their own massive lighting and effects rigs for their shows, so it was a pretty new thing for venues to deal with, and if one of those big trusses fell and hit someone right, it could easily kill them. If they ended up getting a bowl of every m&m color they knew that the crew might be half-assing other stuff. At least, that’s what David Lee Roth said about it in an interview.
