bhaisab you have to warm up the mild before putting in bechamel sauce.,if your hollandaise sauce splits or become thick add hot water ,and you use vinagar not lemon juice.
brown saude or demiglace is 3 stage roux flour and butter and good beef stock. in westers countries you get demiglace mix and beef base just like chicken maggi cubes which makes life easy

For bechamel sauce you can also boil the milk with some cloves ,bay leaf ,and a onion ..then add into the rough.
