  • Hello and welcome to Old Ways Gardening and Prepping. 🍀 Would like to welcome you to my garden as well as up under the canopy. Today will be cooking something that I have not canned up in a while, and happy as can be about it.
This afternoon will be making a batch of honeydew melon jam. Now with this recipe you need to either use a honeydew, cantaloupe and or a canary melon. Unfortunately watermelon will not work for this recipe because it's not a firm flesh melon.
Honeydews are high and many vitamins and minerals. Honeydew melon contains several nutrients that are vital for repairing and maintaining strong bones folate, vitamin K and magnesium. It also contains vitamin C & B6 and potassium. Honeydew melon contains the carotenoids lutein and zeaxanthin, which are powerful defenders against vision loss.
The recipe is a simple one and only needs three ingredients. As long as you follow along with me through the recipe you will know how to cook it.
    Honeydew Melon Jam:
2 lbs. of diced honeydew melon
    Two cups of cane sugar
    Juice of one large lemon
Yes it is that simple and easy. It just takes a while to cook it down till it starts to jel on its own. It's an old fashioned recipe that does not use pectin.
Hope this video encourages you as well to make your own honeydew melon jam. It's simple and easy. Something amazing to have on your pantry shelf. Everyone take care and have a blessed day.
    Blessings,
    Teresa

Yes it is a thing due to being a foodie. 😉 Yes I can a lot of the usual canned items, but just can't have a boring pantry. Was hoping it would excite a bunch of people to break out of the box and try new things. So happy that you enjoyed the video. Take care and have a blessed day. ❤️🍀

Back again. I just made up some of this this morning ( in the water bath now) .. and OH MY!!! Is that tasty!!! 😍 Not overly sweet, but nice and sweet. I used one grocery store honeydew (not as ripe as I would've liked)... it set up just as you showed (I had no doubt, but it is fun to have the same results) ... I did use an immersion blender to make more of a smooth 'butter' kind of jam... it turns out a nice light yellow ...and one large melon yielded 3 quart jars with a few tablespoons to enjoy now as a sample. Love it! A keeper recipe. (Now I wish that I had grown some honeydews in the garden this year...) Thank you!💕 I might make up more as I find more honeydews at the stores...

Great to hear that you made it, and found it to be just as good as I said it was. Don't forget you can also use cantaloupe as well. 😉 Happy that it turned out as well for you as it did for me. Your welcome and more than happy to help others be able to have good recipes. Take care and have a blessed day. ❤️🍀

They are wonderful and full of aromatic spices. It's a old Southern treat that unfortunately not many people make any more. ❤️🍀

I have never had honeydew jam! This sounds interesting! Sounds like your neighbors need a swift kick where the sun don’t shine but that’s just my opinion LOL thank you for sharing!😉

Oh it is amazing. Best way to put it is a jar of summertime. 😉 Oh believe me I agree with you fully and their parents didn't spank them enough when they were children apparently. Hopefully eventually we want to move to BFE so we can do even more things. That's going to be a miracle but miracles do happen. You're welcome and I'm glad that you enjoyed the video. Take care and have a blessed day. ❤️🍀

Wow - how large is your water bath canner to get all of those beautiful jars? ( Do they even make double stack water canners?! 😅 Gotta find me one of those if they do...or did you have two canners going at once? ) I didn't plant any honeydews, but we do have a few cantaloupes. I am a little unsure about making jam with them though, (besides holding some for jam versus good fresh eating them all) as one year I followed one of those 'sunshine in a jar' canning recipes and YUCK... it was more like a nasty pickled something or other... 😝. But I suppose everything tastes better sweetened and made up into a jam . 😊

My water bath canner it one of the very old big ones. Not these little dinky things they sell nowadays. Rebel Canner and double stack with no problem at all. They were also all jelly jars so they are easier to double stack. You can also use a very large stock pot as long as you have something in the bottom to keep them up. Can also use your pressure canner plate for the bottom if you don't have the jar rack. Personally don't can up anything unless it tastes good so not to waste jars. 😁 Took some leftovers to family last night and he took a big bite and all he could say was OMG. 😁 ❤️🍀

Forgot to say the other pot was what I cooked the jam in. 😉

@@OldWaysGardeningandPrepping - Thanks for the explanation and the hints on how to stack. I was reading through an older 'Ball book' that had a LOT more pressure recipes than they do now. (They were rebels then, too... which is kinda funny to me...)

Yes agree and also they were shown how to can up a whole lot more than the handful of things now. The food lobby is a whole lot more powerful than people know. Go back to the ball books in the 60's you were taught a whole lot more than now. A lot of information is kept from people than it should be. ❤️🍀

What does water bathing do for the jars? Whats is the difference between the water bath and the way ive seen you with the other one. Sorry i am clueless about any type of canning.

Water bath canning is just another way to can. It is usually used when the food that is being canned is more acidic. Most food that is low acidic has to be pressure canned. ❤️
