- It is blackberry season and one the best way to preserve those brambles is to make them into blackberry jelly. This is one of my favorite things about summer and it makes a great holiday gift as well so make plenty to give away.

Can you reuse the jelly bag or do you throw it away?
just wash it out and re use it. That is the benefit over using cheesecloth. :)
I was under the impression from all of the canning videos and books I have studied that butter, lard, or basically anything from an animal HAD to be pressure canned or it would go bad or lose seal or even kill you?
good point. I think you are correct when you are talking about dairy products and what not but a pat of butter doesn't really affect it that much. It is an FDA tested and approved recipe anyway so no worry's on this one.
What can u use in place of butter, lard, etc?
Actually I use very little sugar and it sets just fine hmmmmmm
