Proof Bread is a modern throwback to a way of life that values small-scale craftsmanship, local community, and creativity.
We are a team of passionate bakers working in a historic building in downtown Mesa that has been converted into a retail bakery.
Everything we bake is long-fermented with our sourdough starter ‘Harriet’. Each product is artisan, crafted by hand, from the best local ingredients, with no shortcuts.
We bake in line with 13,000 years of human history, avoiding artificial processes and unnecessary ingredients. Honoring tradition and serving better bread for our community.

Not sure why all these bitter comments. I love and appreciate the passion and effort that goes into making beautiful tasty bread, the community that it brings and what goes into the scoring design.
Yeah, I see just pure ignorance of the craft that goes in to making bread. Luckily, he is well off with his bakery and few rude comments that don't give any insight are not of great importance 😅
What craft is on display here? Did he make the table, the bread boards, the razors to score the loaves, the industrial mixing equipment, any of the stainless appliances in the back, the ovens, the rising bowls?
I think we both know the answer to all of that lol. Having a recipe you futz with for a few weeks until it works and then mass produce doesn’t seem like a craft. This seems like a small scale operation but where’s the love or passion going into this? Where is the art? Are boundaries being pushed? Anything new or original happening? Is the art the few minutes taken with a razor bought off the shelf?
@@bennetttomato If you watched any of this guy's videos you'd see how passionate he is about baking and always improving the quality of his products, plus always creating new recipes. A painter doesn't make his own paintbrush, why does a baker need to make his own oven? why are you trying to gatekeep "craft"?

I understand the price of things right now, but I don’t mind paying $10 for a loaf, as long as you give me a decent size loaf. The green olives bowl and cheese and jalapeno sold at former Hope’s Artisan bread in Litchfield Park is just toooo small.

The green olive boule we sell is $7. The Jalapeño cheddar loaf is notably bigger in size.

I thought so too in the beginning, but read all the positive comments, so I stuck around, and I’ve been binge watching his videos. He’s an interesting dude.
Bread - flour, water, yeast, sugar, and salt. That’s it. Depending on the volume you use of the above ingredients, it will dictate the type of bread you will end up with in the end. Anything more than $2.00 for a 2 pound loaf is highway robbery. Very simple.
