Have you heard of garlic pucks? I saw it on Acre Homestead where she peels garlic cloves, puts them in a food processor, then scoops out (2 tablespoon sizes) using cookie scoop onto a cookie sheet. She freezes the pucks, then puts those in a ziploc bag in the freezer. I will be trying it. 😊
You can make true pickles, no canning involved, make up some water bath relish with cucumbers or tzatziki sauce, or make cucumber ice cubes with mint leaves for drinking in winter.
Hi.. have you tried Blue Lake pole beans? They are stringless and prolific. I simmer tomatoes, strain out the seeds and skins and freeze in ice cube trays and then freezer bags. Also, we love Gazpacho (cold soup) to use up tomatoes, cucumbers, peppers, onion and garlic. New York Times has a great recipe.
Beautiful harvest... I am amazed your squashes came out so clean. Mine get all kinds of surface damaged by raccoons, or who knows what. That is why when the fruits are forming, I have to wrap them in onion bags, or some mesh bags. Most of the damages are not severe, just not pretty to look at. I also did the clean up yesterday, filling up 5 bags of leaves, etc. Your rollilng them up like burrito is a great idea. I also freeze tomatoes like you. The only problem is they wouldn't be nice in raw salad dish, but good for soups and tomato chutney or sauce. I think the best way to preserve cukes is do a fermented pickle with them.. ua-cam.com/users/CleanFoodLivingvideos No canning. Very simple and you can put them in the pantry, not necessarily in the fridge. Much healthier because of all the probiotcs.
