Thank you for the video. Watching the two professors and students making kimchi together makes me happy. Before refrigerators, Koreans made kimchi with their neighbors in preparation for winter. There are records of kimchi from the Goryeo Dynasty(10th ~ 14th century), and it was made with turnips. I like radish kimchi the most.

The best kimchi I've ever had was essentially homemade in big plastic trash cans by the cooks of the RoK Marine's 72nd Battalion. Love that stuff.
