Green Pea Soup - Makes 3 servings
198 Calories - 28 grams carbs - 4 grams fat - 9 grams protein - 7 grams fiber - 11 grams sugar
14 ounces frozen peas or fresh shelled peas
2 cups chicken broth ( can substitute vegetable stock or water)
1/2 large onion
1 cup fresh parsley
1/4 cup heavy cream
1 tbsp salt (or to taste)
1 tsp pepper
In large saucepan soften onion in olive oil. Add peas and broth and bring to boil. Turn down to simmer and let simmer 10-15 minutes. The last minute add herbs and cream. Cook for a minute or two.
Blend in blender (don't forget to take vent hole lid off) until smooth.
Can be served hot, warm or cold.
