Before watching the video, I am going to say the answer is a hard "NO" but I am willing to bet that the intention was there, and he ended up as cut content, likely because the devs couldn't get Yoshi to work properly before the release date of the game. Yoshi was actually cut due to the N64 not having enough file storage, although Nintendo could just create a PC version with Yoshi being rideable because PCs have more file storage than the N64.
