How To Make The Perfect Roast Chicken - Spatchcock Chicken Recipe

  • Today we are going to make a Whole Roasted Chicken. It seems like a lot of people are a bit reluctant to try cooking a chicken whole. Here, we are going to cover a method that will make this process much easier for you. It may have a funny name, but a Spatchcock Chicken Is no joke! Let's Make it Happen.

    Ingredients: Grocery List
    1 3-4 lb Whole Chicken (neck and giblets removed)
    1 stick of butter
    1 lemon (you can add an orange too if you want)
    1 package Fresh Poultry Herbs (sage, rosemary, thyme)
    3-4 cloves garlic
    1 onion (sliced)
    salt, pepper, garlic, onion powder, BBQ or Creole seasoning, Italian seasoning
    Directions:
    Preheat oven to 400 degrees
    Start by removing the backbone of the chicken. Take your kitchen scissors and cut down each side of the backbone and remove it. Next, take a sharp knife and press down on the back of the breast bone until you hear a crack. Use your hands and break through the breast bone so that the chicken lays flat.
    Trim any excess fat or skin and dry the entire bird thoroughly with paper towels. Season the back side and flip over to the breast side.
    Brush olive oil on your dried chicken skin. This will help you get color and allow your seasoning to stick. Season the chicken with whatever you prefer.
    Once the chicken is seasoned thoroughly, build your bird nest in your skillet or roasting pan. Lay down the sliced citrus, onions, garlic, and fresh herbs. Place the bird, breast side up, on top of the nest.
    Place the skillet or roasting pan into the oven or smoker at 400 degrees for about an hour or until the breast meat registers 165 degrees. (Dark meat can be 175-180)
    Add butter toward the end of the cook and baste the chicken if desired. (Reserve the butter and drippings for gravy if you'd like)

    So this is now the third time I’ve made a chicken using this method and it’s always a winner. My kid sings my praises, my pitbull dances, the cat looks slightly less judgy. You’ve turned me into a rock star in this house.

    This was absolutely delicious! I saved and chilled the remaining liquid after roasting the chicken. I used the chilled layer of butter from the refrigerated drippings the next day to sauté onions, celery and carrots for chicken soup base. It made a delicious soup. Two winning meals from one chicken.

    Forgot I had put a whole chicken in my deep freeze a month ago; pulled it out for it to defrost in the fridge Now I’m ready to do this chicken. We’ll see how this comes out…Your recipes haven’t disappointed me at all.
    I made the first comment 10 months ago-10 months and 5 whole spatchcock chickens later, this recipe continues to be a hit here at this house during the colder months! Served it to a family member who doesn’t like lemon in anything but they ate this all up. Got some other family coming in for holidays--I bet you I make this again. I need to buy stock in the creole seasoning. The other plus this is the recipe… You only mess up one dish. I love it.

    Turned out so good !! I didn’t even have the herbs to put under the chicken but turned out delicious. I also subbed bbq rub w smoked paprika. Followed everything else. Everyone loved it

    2021 darn, I just bought a "spatchcock" chicken..and your video and another used the cast iron, i just put mine own a foiled covered cookie sheet and had the temp on 375 and just changed to 400 cause it was browning (covered the wings with foil), I'm not suppose to eat garlic, lemon etc, BUT, I'm going to give this a try, looks delicious. : ) Mine? I'll settle for "tasty!" ; )

    Do you time the chicken cook time by the pounds it weighs? Juices run clear is not necessarywell cooked in my experience because I noticed can still be rubbery in some bites of the chicken I prefer well done with all my meat! I Did the 175-180 as well I’ll try this recipe next time. My chicken still came out good just longer cook time

    Just saw this recipe/technique for roasting a chicken this way. The bird is currently in "the tanning bed"! I was just warned that using lemon in a cast iron is a no no. Too much acidity can cause excessive leaching of the iron. Curious as to what others think.
