You're spoiling us during this holiday season with all these uploads! As a mushroom LOVER, you've really been speaking to me the last few months hahaha. Have you ever thought about doing online cooking classes/vids? Youre very good at explaining things. But I could be biased because, just like Taku and Ian, you seem like a great dude.
As long as I can remember my dad and mom would can our hen of the woods with our peppers and sauce. Yet to this day my brothers and I continue the tradition. We tare the pedal in stripes for our peppers. If we have way to much to add to our peppers say like in one fall while canning peppers we will freeze the rest of mushrroms until the next fall cause we might not always fine the hen of the woods. An old Italian man taught my dad about the hen of the woods. He have always called them Sheep's head and yes we fine them around the base of oak trees. We also tare pedals off and deep fry them rolling in season to taste flour. Yum Yum DELICIOUS 😋 😍
Can you freeze them without dehydrating them first? Some Mushroom types turn to mush if you don't dehydrate them before freezing, but I'm guessing that hen of the woods, being a bit more fibrous than other mushrooms and containing less water, might survive it.
Oh my, grilled had to add a whole different layer of flavor! I love this young woman, she rolled with your idea and took it up a notch. I think you two could make some great meals together! Um, not like that sounded, but you know what I mean, two great chefs and all. Oye, I'm sinking here and refusing to let myself take the ladder out of the hole I have created. Please say you know what I mean Will. It looks like an amazing meal and grateful you showed us the steps to achieve it. I'm going to go hide now.
This conversation reminds me of the classic New Orleans song by Chubby Carrier and the Bayou Swamp Band "we make a good gumbo/a mighty good gumbo...." Tab Benoit, fantastic blues-rock guitarist and singer, does a great version of it, we saw him play last weekend.
Thx for the video Will-I-Am impressed with your pickled mushrooms. Never knew that was a thing, but I shall now seek it out and gently masticate on them. Your vac sealer does just as good with liquids as mine. Lots of air still inside. Only the expensive ones do wet vacuuming well.
The Mushroom Wonderland channel did a video on pickling chanterrelle's and other mushrooms. He posts mushroom foraging and identification videos almost every week from the Pacific Northwest.
Very interesting will I want you to make a show going and picking the mushrooms so that I can learn how to do that otherwise thank you very much. I really enjoyed it.
The throats looked to die for ! The mushrooms looked great too ! My son is moving back to NYC from London and I might have to come visit him. Cities are not my thing but the food might make it worth going.
@@CookingWithClams if I come to NYC I’ll definitely stop in. A lot depends on how big of an apartment my son gets. He’s thinking about Brooklyn. I’m too broke to afford a NYC hotel for a week or two. Need enough room to crash on his couch !
I have instant vac sealer envy. I would love to have a chamber vac like yours. I've done Chanterelles like that, it was a Polish recipe that I used. And yes, they are amazing.
I'd love to see a video about reconstituting dried oyster mushrooms and recipes for cooking them. I have several bags of foraged oyster mushrooms in my freezer.
@@CookingWithClams, they're so meaty that even if they spend hours in a slow cooker with a roast, they stay firm, almost gelatinous, and I'm wondering how to improve the texture and/or break down the chitin so they're easier to digest.

Ever make pickled octopus? I had an aunt by marriage who was born in Greece and she would make pickled octopus in a gallon glass jar; I don't know exactly how she prepared it or how long it had to marinate inside the jar but it was extremely tender and my brother and I could eat a whole jar of it in a week.
@CookingWithClams , in Greece, they would throw octopus against a rock and then partially dry it on a clothesline-like rope before cooking, presumably to tenderize it; on a visit to Greece years ago my dad got a little lost trying to walk back to his hotel after a few drinks, and blundered into a clothesline full of slimy half-dry octopus in a dark alley!
Will, To tell the truth, I'd only eat fungus if i was starving and there wasn't any barbecued possum available first :) , but that was actually interesting.

Spoiler alert: it’s a mushroom video! All jokes aside, I have posted a lot of fishing and crabbing not just mushrooms. In fact just yesterday was a sheepshead video. I post what I enjoy doing and recipes I have fun making. Foraging happens to be something I love. I’m also posting the mushroom vids on days I don’t normally post (wednesdays are my regular content) for the people that DO enjoy them.
Leave it to a Florida man to complain....... Will can post as many foraging or mushroom videos as he likes and I'll tune in for those just like I do for the fishing and crabbing videos. It's all food and it all goes into the same place in the end!
