    Really nice how Bart is using snow to use if for blanching :)

    We, the Portuguese, really like Norwegian cod. Unfortunately, only dried salted cod is available.

    So you use the most deliciuos, local and sustainable cod and then you pair it with peppers, eggplant and zucchini? Those sure grow very well in the norwegian winter!

    Ha ha ha, the Norwegian lads are cool guys. The YT is flooded with Southerners frying fish in their villa terraces in the 35 oC sun but the Norwegians do it in a wirling snow storm - Vikings indeed.

      Because they are available in the shops. If you limit yourself to what grows around Lofoten in January you're gonna have a tough time.

    Why didn't you just start by cooking the onion and then add the peppers (I always put those two in at the same time though, they take about the same amount of time to soften) and other veg?

    This is still to this day, the most complicated dish I ever created (I put my own twist on it) and it’s delicious. The only down side is I spend so much time making it, I didn’t have the time to make a soup (I was going to make a mushroom cream soup), so I just poured orange juice...I think I was 17 or something but making a fancy meal and just drink orange juice feels really weird to me lol.

      In some regions, Paprika = Bell peppers (both fresh and dried powdered form as well). Fresh from the market, yellow, orange, and red varieties are called paprika/파프리카 here in Korea, too.
