My 11 year old daughter made this frosting today in two batches. One was made with the same amount of milk as the recipe above and one with slightly less. They both came out fluffy and delicious. The frosting was quick and easy to make.

I absolutely love this video because that lady shows you how to make buttercream icing without the use of a nasty high-pitched mixer. I prefer to do it exactly the same way she did it, just because I don't have a mixer, nor do I want one, because it sounds bad. What a great video!
I don't own a mixer, never have. My dad owned a pastry business, quite successful too, and he made his workers mix buttercream by hand. He told me that when people put more effort into making something, they tend to do it better than cutting corners. I totally get that it's easy to just use a mixer, etc, but I see his point too. It also isn't that hard. What this lady showed us, in reality, takes about 1-2 minutes of extra time and is a good workout. I am convinced that the time it takes you to go over to your cupboard, get your mixer or, or plug it in, get everything ready takes about 60 seconds anyway, and by this time, you're almost done with the manual hand mixing process.

Thank you so much for this very well done video. I tried doing this before and my mistake was just adding everything together at the same time, after creaming the butter. The sugar and the milk have to be added gradually. otherwise, you end up with what I had.. . clumpy white chunks that look awful on the cake. Thanks again!

I've never used milk! I think that's why I'd been having trouble. I do have a metal bowl that I usually use so using my wire whisk works for me. Much less effort needed to make it fluffy... I don't have a mixer appropriate for baking preparation... Gonna try this now!

This is useful for those of us that bake in very small batches. A mixer doesn't work when making 1/4 or 1/8 of a recipe as I do when baking for two.
