It started when I was about 12 years old and every year, over Thanksgiving weekend, my mom and I and my siblings (all older than me) would make a gingerbread house with all kinds of candy, gumdrops, cookies, real gingerbread cookie, and we did that every year for the next 20 years and then my mom started doing it with the grandkids every year. It can be a lot of work depending on the detail and the size of the house. Of course every bit of the house was edible but after it sat around for a couple weeks some of the pieces would get stale. We got very inventive with the details. It always turned out really cool looking and it inspired friends to do their own. We always had the best one.
For next time, an excellent “glue” is simply melted sugar. It hardens quickly but you do need to be careful about getting burned. Melt the sugar in a large, flat skillet. Dip the edge of one piece of gingerbread in the melted sugar and then quickly stick the pieces together. It hardens and holds very quickly. You can also drizzle the sugar along edges with a spoon.
I once had a roommate drop a pot of melted sugar on his feet because the pot was, well, hot. Pretty sure his soul left his body for a few moments, but somehow he got away without serious burns. The linoleum floor was still slightly sticky when I moved out a couple of years later.

Well done!! We do gingerbread houses every year. One thing we’ve found that really helps is using a microplane to file the edges where the pieces meet. So you can make mitered corners on the roof which makes much more stable seams. Hope this helps next year - can’t wait to see your next efforts! Love your channel!
I have sooo enjoyed your attempts at gingerbread houses. It brought back so many memories of my first one and I had similar problems. After so many pieces falling off and icing getting all over everything I found a magic ingredient and never had another structure failure. It's Wiltons meringue powder. You add it to your icing and will start to harden faster and become rock hard. Hope to see a new gingerbread house this year.

So. It’s July ‘22 and I’m watching this video for the first time. I love how real your exasperation is and all the “f”s scattered throughout the video. The end result is magnificent.
I learned the best gingerbread house hack this year. To assemble the house melt sugar and when caramelized dip the sides of the house in the sugar and quickly assemble. As the sugar quickly hardens it keeps the house perfectly together. No more need to wait for royal icing to harden while praying the house doesn’t collapse. You can always use icing over the caramel to decorate. It’s been life changing especially with small children that want to poke and touch the house before icing has the chance to harden. You did a phenomenal job on the home alone house it’s AMAZING
I'm seeing this after having followed the channel relatively recently... the sheer chaos Jamie creates on a consistent basis is so stressful, but fun to watch (mostly because it's someone ELSE going through the insanity, not me!).

As the season is approaching: if you are attempting another one this year, the Scandinavian way to glue the pieces together is by melted sugar/dry caramel. It is hot as H while dealing with it, by works really well as a glue. 🤶 (Our dough seems different as well, the pieces are generally much thinner).

For a first time on such a big project , you did great . some tips though if i may , there are mint gummy trees you can get and shredded coconut dyed green is fantastic as ground cover , it looks like grass , alternatively you can get creative with it and paste some together to make trees etc.
