That looks delicious! I could easily eat more of that than I should! You asked for what we'd do to level up so here's my ideas, based on what I do with my own chili: Dry toast some cumin and coriander seeds in a pan until very aromatic to bring out some big flavor, then grind them in a (clean!) coffee grinder. Chorizo! Mexican, of course. More peppers! To me, chili is about peppers, so in addition to that lovely bell, how about a couple Chipotles, an Ancho or Poblano or two, and maybe a couple serranos or a habanero to kick the heat up. Habaneros have some great flavor too. I like to mix up my Bell peppers for some color, 1/2 each of a green, yellow and red to brighten the dish up. I've been known to use up to 5 pepper types. Not necessarily for heat but flavor. Poblanos and some others like Anaheims, Anchos (ripened dried poblanos) are not too hot but have tons of flavor. The hotter they are the fewer I use, I want to keep the heat noticeable but reasonable! For liquid, I go with beef broth and a bottle of a tasty brew. Nothing too bitter or hoppy, but something nice you could drink all day. Pale or amber ales, or a good lager are good, IPAs can be too hoppy. Never used a 15 bean blend before but I'd try it if I could find it! I usually use black beans or kidney beans, but have done a sausage and white (Navy) bean chili before. And finally for the meat, I will use up to about 2/3 venison if I have any. I do not hunt but I've been gifted with some before and ooooooWEE that makes some good chili! Any strong flavors are lost when its mixed in and simmered, especially if you cook it with some bacon. A mix of ground and diced meats give it some good texture. Yessir, that is my approach, but I do not frown on any chili! It's all good just in different ways! I never make it the same way twice! I need to make some soon... got some venison in the freezer Peace out!
Your last chili recipe is the one I based mine on. I just added W sauce like your recipe before that. Also for my pinto beans I use the 'ranch style beans' brand. My wife also prefers ground turkey

Nobody here in Australia cooks mince meat with beans. Maybe red kidney beans in their taco meat seasoned mix is about it, or the 4 bean mix in their salad. Sadly, Chili Bean mix is a canned product or a make yourself at home product here. 15 bean mix seems way over the bean counter though. Specially on a budget. I mean you have your 4 mean mix, your baked bean mix, then you have your dried yellow and green "peas" which are like dried beans etc. So there it gets confusing for us Australians. We call them split peas, yellow and orange and green. But some people call them beans also. THey are a legume. Like a bean. But more a Pea. 15 different types of beans in that small bowl doesn't seem like you have more than 2 of each bean.

I'm from Texas but also I lived in Iowa(they put beans in chili) lol. Personally, Id say chili has no beans. I call it stew. However, If someone hands me a bowl of this and calls it chili they arent going to get any push back from me they are just going to watch me at a bowl of "chili" :)

In the south we would have cooked the onions bell peppers and garlic first and then added the meat but as long as it’s good that’s what matters.
