I like to use my ground deer meat to make my own breakfast sausage. I do grind the meat myself and usually add a pork butt for the extra fat. It's fun, healthy, and yummy!
I've been eating ground venison for 35 years. Being a very lean meat you have to ad some sort of fat. I use olive oil or sometimes some bacon grease. When making meat balls I'll ad a little bit of ground pork or Italian sausage. I use ground venison for tacos, enchiladas, chili, meatballs, meatloaf and any other recipe that calls for hamburger. Also have seasoned it to make breakfast sausage patties and chorizo for tacos. Venison is the healthiest red meat you can eat. It has virtually no cholesterol. Good luck and love your videos.

I grew up eating Deer --- ground, stew, and sausage. My husband doesn't hunt, so I order Venison from New Zealand. I like your taco recipe and will try it. It does look good. Many blessings to you.
If I have ground venison that tastes a bit gamey, I will cook it in water first. Just put a cup or two of water in a skillet, add your ground venison, break it up as it cooks. When almost all of the pink is gone, I'll drain and rinse the meat in a colander. Wipe out the skillet, add a small amount of oil, then add the drained and rinsed venison back to the skillet, saute with your vegetables and seasonings. This helps reduce the wild taste. Thanks for the tip about the butter! Hadn't thought to do that, but will definitely be trying it.
Thank you sir much for this video. When I was in grad school my roommates and I were very poor and we were so fortunate to have ground deer meat from my roommate’s dad. We ate a lot of deer meat tacos.

John,the whole reason I ground deer meat was to make chili !! Don't feel bad, haven't killed me a deer in 10 years. That's when I stopped bow hunting. This past season I was unable to go for gun season. Thanks for the reminder of that delicious Deere chili and liver /onions!!!

Hi Corey, I have used ground deer a lot in a varity of recipes. I like to put some instant beef boullion in with it when cooking, it adds a lot of flavor to the meat. I have used it in chili, spaghetti, goulash and a lot of other recipes that you usually use ground beef. I really enjoy all your videos and watch every one of them. Hi Corey, we process our own venison and add bacon ends and pieces when we grind our meat. It gives it just enough fat and flavor. We use our ground venison for any recipe you would use beef burger for including, meatloaf, spaghetti, hamburgers, taco meat etc. I’ve also found an awesome recipe called Venison Tortellini Bake with cheese tortellini and mozzarella cheese. Anyway so glad to see the younger generation eating venison.
Good basics. There are a lot of youngsters that need to learn these basics. Hint...mix in a portion of ground pork with venison (deer,) and elk to make great ground meat dishes such as Mexican or Italian. They compliment each other. The pork delivers fat. No fat...no flavor.
Amen on the deer processing. I my opinion the sooner you can get the deer skinned and quartered and in the refrigerator the better it will be. I usually grind the meat 3 days later and vac seal it. We grind everything but the back straps and neck. Good video Aunt Corie.

I was never a fan of deer meat, but, I have learned my own way to season my ground beef for tacos. Trisha Yearwood showed how on her cooking how on the Food Network and, I tweaked it to my liking and, cumin, white pepper, onion powder, garlic powder cayenne pepper and, paprika, onions and, Worcestershire Sauce and chicken broth.
Corie, deer meat can be so good. I make spaghetti sauce, taco meat, meat loaf, soups and Chilli. Garlic and pepper helps with wild taste. My Honey and dad always harvest a doe not wet dog taste and smell. Buck meat large ones are so strong wild flavors, seasonings always helps. I just found a meat pie recipe using puff pastry dough. My next recipe to try, easy lunch and on the go for our working men.

I'm so happy to have stumbled across your channel. Deer burger is so good! We usually get two deer a season and grind one strictly for burger (besides keeping the tenderloins) & the other deer for stew meat or roasts. We usually just use the burger as a replacement for beef like is chili's, tacos, lasagne and even meatloaf. I've never tried to can deer meat but I know lots of people who do it. My favorite is chili from deer, placed on a flour tortilla with a layer of cheese and heated in the microwave. It'll also work with the proper seasoning in a dehydrator for slim jims and jerkey.
Corie, with that same recipe try adding minced garlic , white or Jasmine rice and Better than bouillon for a tasty dirty rice. It’s one of my favorites and like you said it’s a tasty quick dish. Corn bread side goes great of course.

So many folks say they don’t like deer when the matter is they under season and don’t know how to cook it! I don’t like mixed meats, they always land rubbery to me but when making burger patties add your pat of butter to the inside. My daughter prefers deer burgers over beef. Generally any chili or vegetable soup, tacos I use deer and nobody is the wiser. Deer steak is delicious!

Corie, we've eaten ground deer meat for years in many recipes. My husband also made his own sausage with it. Your recipe sounds delicious, especially adding butter. Just recently I had to give my big dog pills and capsules. I used bites of hot dog until she bit into the medicine and then she refused it. The same thing happened when I tried a purchased product. One of the vet's assistants suggested putting the medicine in a clump of wet dog food which made me think of some old venison in the freezer. He said that would be good because it was lean and good for dogs. So I wrap the medicine in a clump of ground deer meat and she takes it right out of my hand. If it's a bit too wet I add a few bread crumbs.
What we like to do with ground meet is add rice to a mixture, very similar to the one you made and let it cook almost thoroughly. Then we take some large peppers, stuff them with the mixture and bake them. This meal is great on its own, but what really makes it all the more tasty is a side of unsweetened yogurt or any kind of white sauce (made from dairy). Happy cooking! 😋

We eat a lot of deer meat, canned, cubed tenderloin and ground. We love, spaghetti, lasagna,manwich and loose meat burgers. To make loose meat burgers I brown the ground deer meat, drain and slightly rinse the meat, return to skillet add grated cheese to top, cover skillet with a lid and melt the cheese. Spoon onto hamburger bun or bread and add catsup, mustard etc etc etc to your liking.
That looks so good. We have never cooked with deer meat as hubby is not a hunter but I've eaten it before & really like deer sausage. Any recipe that calls for ground hamburger could be replaced with ground deer meat. Thanks for the recipe. Your instructions were great! Hugs to you & Austin!

Corie, this would also make a great pizza...We use pita bread or flat bread or even a flour tortilla, a few spoons of Pizza Quick Sauce (99cents a jar at Food Lion), put the browned meat/w/onions, add any slice bell peppers (I like the flavor of the orange ones), onion slices, or whatever you like on your pizza. about 8-10 min on a cookie sheet in a 400* oven....yum! I cook ground venison often and love it. I make a low 5 % fat rational and add olive oil as needed. I use it for tacos, spaghetti, burgers, anything that ground beef is used for. Great video and good cooking episode.

Ground meat is the most versatile meat to cook with, and grinders are not that expensive anymore. You can make hamburgers, meatloaf, meatballs, enchaladas, potato meat pies, lasangna, tacos, sausage sticks, breakfast sausage, summer sausage, jerky sticks, ect, ect,ect. So many things it will make your head spin. It is well worth geting a meat grinder, not only for deer meat, but for any other meats like chicken, turkey, rabbits squirrel, porky pig, and donald duck, and anything else that you want to grind up.
Hi Cory-we add pork to venison as we grind it. Your butcher can create the mix for you according to the blend you prefer. Also, we have simply cooked ground venison with BACON, the duct tape of the kitchen! Blessings, little sister.

Just a tip I've used over the years: with dried herbs, like the oregano, crush it between your palms before adding to bring the flavor out.

We eat a lot of deer meat, canned, cubed tenderloin and ground. We love, spaghetti, lasagna,manwich and loose meat burgers. To make loose meat burgers I brown the ground deer meat, drain and slightly rinse the meat, return to skillet add grated cheese to top, cover skillet with a lid and melt the cheese. Spoon onto hamburger bun or bread and add catsup, mustard etc etc etc to your liking.

That looks so good. We have never cooked with deer meat as hubby is not a hunter but I've eaten it before & really like deer sausage. Any recipe that calls for ground hamburger could be replaced with ground deer meat. Thanks for the recipe. Your instructions were great! Hugs to you & Austin!

Corie, this would also make a great pizza...We use pita bread or flat bread or even a flour tortilla, a few spoons of Pizza Quick Sauce (99cents a jar at Food Lion), put the browned meat/w/onions, add any slice bell peppers (I like the flavor of the orange ones), onion slices, or whatever you like on your pizza. about 8-10 min on a cookie sheet in a 400* oven....yum! I cook ground venison often and love it. I make a low 5 % fat rational and add olive oil as needed. I use it for tacos, spaghetti, burgers, anything that ground beef is used for. Great video and good cooking episode.

Ground meat is the most versatile meat to cook with, and grinders are not that expensive anymore. You can make hamburgers, meatloaf, meatballs, enchaladas, potato meat pies, lasangna, tacos, sausage sticks, breakfast sausage, summer sausage, jerky sticks, ect, ect,ect. So many things it will make your head spin. It is well worth geting a meat grinder, not only for deer meat, but for any other meats like chicken, turkey, rabbits squirrel, porky pig, and donald duck, and anything else that you want to grind up.
Hi Cory-we add pork to venison as we grind it. Your butcher can create the mix for you according to the blend you prefer. Also, we have simply cooked ground venison with BACON, the duct tape of the kitchen! Blessings, little sister.
