  • This Vietnamese style tomato fried rice is something I ate a lot growing up as a kid. Extremely tasty and pretty easy to make. The scallops pair well but are expensive, so you can use some grilled beef or chicken as substitutes. Thank you to my friend thuy for the rec. Hope you all enjoy!

    My family typically uses tomato paste and will add it with the onions to deepen the flavor before adding the rice. You can use out of the rice cooker imo, just need to use slightly less water to adjust and because its not just straight up tomato sauce you have less liquid to make it mushy, easier to add a char and can add fish sauce
