    2 Eggs, Beaten
    3 Cups All Purpose Flour
    2 Teaspoons Finely Shredded Lemon Peel
    1 Teaspoon Baking Powder
    1 Teaspoon Baking Soda
    1 Teaspoon Ground Cinnamon
    1/4 Teaspoon Ground Allspice
    1/4 Teaspoon Salt
    1 Cup White Granulated Sugar
    1 Cup Packed Brown Sugar
    1 Cup Cooking Oil
    1/2 Cup Applesauce
    1 Tablespoon Vanilla
    3 Cups Chopped, Peeled Apples (4-5 Medium Apples)
    1 Cup Chopped Pecans (Or Whatever Nuts Desired)
    Powdered Sugar
    Allow eggs to stand at room temperature for 30 minutes. Meanwhile, grease & lightly flour (or line with/parchment paper) a 10 inch tube pan; set aside. In a medium bowl stir together flour, lemon peel, baking powder, baking soda, cinnamon, allspice & salt; set aside.
    Preheat oven to 350 degrees Fahrenheit. In a large mixing bowl combine eggs, granulated sugar, brown sugar, oil, applesauce & vanilla. Beat w/an electric mixer on medium speed for 2 minutes. Add flour mixture to egg mixture & beat on low speed just until combined (batter will be thick). Fold in apples & pecans (or desired nuts). Spoon batter into prepared pans; spread evenly.
    Bake about 1 hour or until a wooden toothpick inserted near center comes out clean. Cool cake in pan on wire rack for 10 minutes. Remove from pan. Cool thoroughly on wire rack. Cover & store in refrigerator. Just before serving, sift powdered sugar over cake (if desired).
