Healthy Carrot Cake. Personal Recipe. For First Time Bakers.

    Calories were calculated using cronometer. The ingredients for the entire cake is 2035 calories (pre baking). If you can get 8-10 slices out of the cake, then each slice should be around 200-230 calories. which is much lower than other cakes.
    The recipe in the video makes 2, 9 inch cakes. You can half the recipe to make just one.
    FOR TWO CAKES:
    6 carrots
    1/4 cup of white sugar
    1/4 cup of brown sugar or panela
    2.5 cups of blueberries (340 grams)
    8 eggs
    7 tablespoons of butter
    1 cup of walnuts
    1 box of Philadelphia cream cheese (to taste)
    3 cups of flour
    2 teaspoons of cinnamon (to taste)
    2 teaspoons of baking powder
    1 teaspoon of baking soda
    1/2 teaspoon nutmeg (to taste)
    1 teaspoon salt

      Yes! I put the ingredients into cronometer, and pre-bake the ingredients come out to 2035cal per 9 inch cake. Each slice should be around 200 calories, if you can get 8-10 slices out of a cake. (I'm not a nutritionist but I also think the calories decrease after baking, but I am not sure). Thanks for your comment!

    Wow, your recipe is so different from everything I've seen, and it looks so wholesome! Plus the ingredients are pretty accessible. I can't wait to try this carrot cake. :)

    You didn't mention the 6 carrots or any sweetening in your description recipe. My favorite sweetener is Sucanat, which is dried sugar cane juice. Also when I bake I usually use whole wheat pastry flour or spelt flour. I've added pineapple or cranberries before, never thought of blueberries.
