    Ingredients for the pastry (28 cm tart tin)
    125 g butter, melted and cooled
    500 g wheat flour, sifted
    75 g sugar
    1 teaspoon salt
    2 eggs
    4 egg yolks
    5 g baking powder (1 teaspoon)
    Zest of 1 lemon
    For the sour cherry filling:
    Approx. 500 g frozen or fresh sour cherries, pitted
    75 g sugar
    45 g cornstarch
    Ricotta filling:
    750 g ricotta cheese
    120 g sugar
    1 teaspoon salt
    1 egg
    1 egg + salt to coat
