    Incredible Filo Pastry Cups - It's Easier Than You Think!
    There isn't a recipe for these cups as they are so easy, but for 5 cups I used about 30g or 1 oz of melted unsalted butter, a twist of black pepper makes them look snazzy.
    Recipe for the 2 fillings in this video:
    Creamy leek filling
    1 large leek, diced and washed - 1 tsp of butter or a splash of oil - 1/2 a glass of white wine - 200ml / 7 floz / 0.4 pint double or heavy cream - 1 tbsp chopped parsley.
    Spinach and feta filling
    1 bag of spinach around 250g / 8oz washed - 2 tbsp cream cheese - 60g / 2oz feta

      you are a gentleman sir, and I'm glad I'm helping you do better. Not sure that this is the recipe if you're losing weight, this is more like a day off for me as I'm levelling out on my low carb and sugar diet.

      Thanks for that Sephy, I've been making videos on UA-cam for 5 years now. Getting motivated to carry on is difficult as it's stagnant.

      that would be amazing, I remember seeing Jamie Oliver do this with a creme brulee touch, he cooked out the custard, poured it into the cups to set in the fridge then poured a little caramel on the top, bloomin lovely

    I am pretending comments make a difference! I love crispy flakey doughs. Puff pastry works well to make a "container". Cut the dough into approx. 4 inch squares then cut/deeply-score an approx. 3 square in the middle. Baked in the oven. Plate a square and press down the center of the pastry (the inner 3 inch square) with a fork. Then fill them up and garnish.

      Thanks mate, I think you're describing a large vol au vent there. It's nice now for me a year after being a good boy with the low carb and sugar lifestyle, as I can have a day off here and there and I seem to have found a happy compromise I did get my bike out of the shed last week and intend to get a lot more exercise.

      @@unclemattscookerylessons "vol au vent", I am sure it was French style. The chef that trained me worked his way up through some high end "classic" restaurants. I am looking to exercise more even just getting out and about. I drank to much these last couple of years and have been stuck in the house more than anyone should. I am looking forward to our spring. We still have at least a foot and a half of snow on the ground here...

      @@hubrisnaut you guys know how to do winter, we get a light dusting of snow every few years in the West of England. It's still a bit wet and cold here but spring is sort of here.
      I'm sure you've said before where you are but can you remind me please?
