How well does a 6 star maxed out serpent do? I don't have Odin as 7 star and not ranked up as 6 star

6* maxed serpent is a great option.

I've seen 7 star Odin do great work I actually have 7 star sepent rank 3 and brought in 6 star ascended Odin, both did great work 7 stars are always better for necropolis because of longer timer.
