All I did for my custom dinosaurs was change the color to my liking. For example, I just made my custom Triceratops completely blue, and my custom Indominus Rex black with red patterns.

There are customizers in both Isla Nublar hubs (the ones on the left). Walk into either the Jurassic Park Visitor's center or the building at the end of Main Street in Jurassic World (there's also a human customizer in here). You'll need to collect the amber bricks in the levels to unlock Dinosaurs.
