Cornstarch is an alternative to flour, but the method of making the gravy isn't the same since it won't be started with a roux. Whenever I use cornstarch, I set aside some of the warmed liquid and whisk the cornstarch in so it completely dissolves before adding it back to the saucepan. I've never had any clumps.
As someone with a bunch of major food allergies its so lovely to see you all swapping who is eating what depending on allergies and having that be normal 😊

I so relate with Lo! I don’t have celiac, but I do have a feeding tube and threrefor cannot eat regular food. People constantly feel bad about me not being able to have something or eating in front of me, and often also say that they don’t want something if I can’t have it, but I want the opposite of that! I don’t have gluten issues but I do try to do more of a “clean eating” diet. If you can, use either a coconut paste to thicken the gravy. Potato starch is best to use to thicken gravy, but idk if it has gluten in it or not.
Celiac gravy fan here, the best way to thicken a gluten free gravy is cornstarch slurpees. Make a bouillon of the flavored gravy you want and once warm add the slurpee (cornstorch well mixed with cold water; will prevent the clumping) and mix well on med to high heat. Will get jelly ish after a while if you put too much cornstarch, start small and add more if needed
Blue raspberry sour patch kids were on sale. Blueberries were acquired. Y E S. If I could have strawberries, I'm sure it would be even better, especially cut up so you have more surface area of each touching. Solid 8/10, maybe more depending on flavor combo.
For Lo; The brand schar (bright yellow packaging) makes these amazing honeygrahams that make amazing gluten free smores! That same brand also has maria cookies, digestives and petit beurre cookies that work well for smores too. Best part is that every single thing from schar is 100% gluten free and specifically made for people with Celiacs. It's one of my go to brands as a Celiac. Also kind of besides the point, but schar just brought out these soft double chocolate cookies that are kind of between a cookie and a brownie and they are so heavenly! I am not pregnant, but I crave these all the time!
Schar gf saltine dupes are phenomenal. I picked some up in Paris not knowing they were gluten free and immediately bought more. They remind me a bit of westminster oyster crackers (maybe schar will make a gf oyster cracker...)
The cotton candy reaction is priceless and so cute!!! And about the lime Perrier, when I was pregnant I could only drink water with lemon or lime, otherwise it made me nauseous 😂😂
Celiac since 2018 here--the xanthan gum in the gf flour mix can contribute to clumsiness, in my experience. I like to use straight rice flour for thickening things like gravy :)

Christopher, try cutting the amount of gluten-free flour in half and substituting in corn starch and add a bit more of chicken stock. I've found it helps with the clumpy-ness. For some reason gf-flour tends to be extra sticky, though I don't know why.

For the GF gravy, don’t use GF AP Flour. Use cornstarch starch instead (mix a couple TBSP with 1/4 of cold water) combine all the extra ingredients then add the starch slurry to the hot ingredients. Boil. You can add little by little until you reach your desired viscosity. Enjoy!

I've found cornstarch is much better for gluten free gravy. It doesn't clump up as much, and it's still very tasty. My husband says to mix the cornstarch with water first to make a "slurry" and then cook at normal.
Just a tip for gluten free gravy, thicken it with corn starch! It’s naturally gluten free. It’ll end up clear instead of opaque tho but still taste good!

Chris, the answer to gluten free roux is cassava flour, it is the only flour substitute I found that makes a roux very similar to reg flour.
