They're easy to make and delicious fresh and warm, though you can also make a large batch and freeze them for future use (which is what I do!).     I hope you guys like these tortillas - they're delicious! Just a quick note - Recently I’ve been hearing from readers that certain brands of cassava flour are gritty, sticky and/or don’t perform as well. I’ve been using Otto’s Cassava Flour for years (linked above) and I think in the case of cassava flour, it seems the brand really does make a difference. Hope you enjoy them as much as I do! :) x

      I recently got a gritty bag and Otto's told me that when the flour sits around for a while, fibers in the flour start to point down, and make it through their sieves, and into the bags for the final product. Not supposed to happen. Contact Otto's and they'll send you a new bag. The new bag I got was good, no gritty fiber strands.

      @@jeanettegarcia2884 I tried to use coconut flour the other day and it did not work for me. I threw the whole dough away. I've been trying to make gluten free tortillas, I think I can try this.

      Pamela's Cassava Flour did not work for me. Unfortunately, it never got past the soupy batter stage.

    I'm from Brazil, and as cassava is native from here and other countries in South America, the native americans from our region have been using it for centuries to do many things, and we inherited the use of cassava from them, but I've never seen something like cassava flour "tortillas". But it's an interesting use, I must say.
    One staple food in the Northeast of Brazil is made not with cassava flour, but with cassava starch. It's called "tapioca" or "beijú", depending on the region of Brazil, but is basically a cassava starch crepe/tortilla. I guess you mught have eaten or heard about "tapioca pudding", which is made with "tapioca flour", which is derived from cassava starch.
    The tapioca "crepe" is usually eaten with coffee during breakfast or the afternoon snack. You can spread butter and/or you can put a variety of fillings, with cheese being the most usual, but you can also use fried eggs, shredded beef or even sweet fillings like banana and nutella.
    The tapioca recipe only takes tree ingredients: cassava starch, salt and water. You don't need oil, butter or anything else to cook them. Even so it can be a bit tricky to get the right proportion. I've think I found a recipe in english that you can use to make them.

    A tip: be careful when cooking the tapioca to not undercook it. An undercooked tapioca is crumbly, while a cooked tapioca has a little bit of elasticity to it. If your tapioca is still crumbly or hard even after you cooked it well, maybe you should add more water to the recipe.
    Cassava starch has many uses, you can make cakes, puddings, porridges and many other recipes with it!

    After many failed attempts at homemade tortillas, I finally found this video and got it right! I don't have a press but was able to use a rolling pin and create the same thin cake, and I added a bit of garlic salt for flavor. *Thank you so much for this great video!* 👏

    My favorite Cassava flour tortillas have gone sky high in price at my Natural Grocer's, so I'm glad to see this recipe to make my own. Since I cook only for myself, I would probably not eat a bunch all at once. So, I wondered if I could freeze them? Would I freeze the dough balls or would I freeze the tortillas after they are made? Love your channel!

      I'm so glad you discovered my video then :) You can definitely freeze them after the tortillas have been made. Just make sure to put parchment paper in between each tortilla so they don't stick together and store away in a ziploc bag or Stasher bag.

    OMG! I couldn't avoid to laughing when she was making the tortillas, SO CUTE! I came from the mecca of the tortillas, Mexico! my mom and my ant use to make tortillas from scratch and seeing this video made me realized how lucky I was. I love this girl's videos, so peaceful and very healthy, I'll try to make this tortillas. Can anyone tell me the name of the balls that look like butter, I couldn't get it. Thanks.

    Hi Lisa, we LOVE making and eating these wonderful tortillas. My son and I have needed to follow a low FODMAP diet recently and I’m sad to learn that we can only have limited amounts of cassava flour. Can you think of a way to cut these with another low FODMAP ingredient, like cornmeal? I don’t want to give up on making these yummy tortillas. If it is possible do half cassava and half of something else, like the cornmeal, I will be thrilled. Thanks so much!

      Yes! I usually make a double batch of these tortillas and then put the extra in a ziploc bag (with parchment paper in between), then place in the freezer. They re-heat beautifully!

    I don’t want to use palm shortening as I heard that it’s not sustainable and loss of habitat is happening because of it. Can I use lard, chicken fat or bacon fat as a substitute?

      I use avocado oil and they turn out perfect !!! I’m sure you could use olive , ? I would try it and see .
      I used to use coconut oil but and they’d only turn out perfect occasionally but once I used the avocado oil they come out perfect texture every time and non stick to the parchment and plastic wrap I use .

      Thanks! And it should, as manioc is just another name for cassava. But I do find different brands of cassava flour work differently in cooking (some better than others). So I always use Otto's brand of cassava flour (linked above) as it consistently works well. :)

      It's hard to tell from the photo, but that looks quite coarse. My cassava flour is super fine, just like an all purpose wheat flour. I've heard from some people that their brand of cassava flour is gritty, which is why I always recommend Otto's Cassava Flour, if you can get it. :)

    Just wondering if you could recomemend a alternative flour choice? Cassava flour is extremely high in carbohydrates and I really wanted to try making these for my daughter who is diabetic. Is there another healthy flour that would give good flavor?

      Unfortunately different flours function differently, so there's not a 1:1 replacement in this recipe. Though I will be playing around with an almond flour tortilla recipe soon. :)

      cassava flour is wonderful because it’s pretty low on the glycemic scale. Please research it, I eat cassava boiled because it is a low carb low glycemic starch starch, and it is higher in calories and much lower glycemic than white rice. Race

      You could use vinegar instead, though it might add a smidge of flavor. You could also just leave it off and they'd be a little less fluffy. But not a biggie. :)

    Key information for recipes are the ingredient proportions which are blatantly missing. If you want me patronizing your website I have to have a reason to do so.       Yes, you can make it without the cream of tartar. It just might not be quite as fluffy. Also, make sure to read the notes on my website about the brand of cassava flour. It seems there are many sub-par brands out there now.

    The tortillas look great, but is the palm shortening bad for you being it's so high in saturated fat, and is this a hydrogenated oil? If it's not the healthiest, can this be swapped out for another shortening, like unrefined coconut oil in place of the palm shortening in this recipe?

    These are my go to food!!! These cassava tortillas !!! I use them for bread as tacos burritos empanadas pizzas 🍕, I also use for a sweet treat like to spread almond butter on. I love them and I love this channel ! Thank you 🙏🏻❤️!!!!

    At My first attempt, the tortillas came out too floury.. but on my second attempt I made the tortillas thinner and they came out much better. My mom taught me to press around the edges to help keep the steam inside which will help the tortillas inflate.

      Luna Collacchi I bet it was the 5th ingredient, palm shortening , substitute it with any oils she said.

    For those who are conscience about the environment and don’t want to use Palm Oil bc they destroy Amazon forest for Palm plantations, would coconut oil work?

    What kinds of oil can I use to replace plam shortenings ? Are liquid oils okay or does it need the same consistency as Palm shortenings ?

    Hi and thanks for this post and all the other great posts you make available. I've been following you for a couple of weeks now with hopes of reversing the pain I have from RA. A big thanks for providing a link to an ethical supplier of palm-based ingredients. The massive and incredibly sad impact the unethical sourcing of palm oil has on rainforests and especially orangutans is beyond belief.

    Much oil, water or cream of tartar I am supposed to use… on your website it said to use 1/4 tsp on baking soda… but that’s it … can anyone help me please

    I just wanted to ask about the cassava flour tortilla recipe in your book I made them today the Otto's cassava flour. I am wondering about the carbs in the nutrition information as in the book it says 2 gram carbs per tortilla if you make 6 servings.when i calculate the carbs from the bag of flour its over 16 gr carbs per serving. I am wondering if it was a typo in the book for the recipe? I would love them to be only 2 grams per serving but am concerned they are much higher. thank you for all you do for us. 😊

    I bought your cookbook and this recipe was in your book however book called olive oil and your video here you are using shortening. What’s the difference?

    Sorry but this was an awful experiment. All the dough stuck to the paper. Tried chilling the dough, less water, more shortening…not one thing worked. It doesn’t release from the parchment paper. I bought everything from the Amazon store she has…for me it was a fail

    Making this today! An idea for a future video: how to pick produce at the store. I bought limes for the marinade and the first one was fine but the other two were woody and dry. I clearly don’t know how to choose limes! Thanks for all your great work.

    I don't have palm shortening can I use something else? I have butter and I have avocado oil and maybe some coconut oil

    Vegetable shortening is really bad for the heart. I avoid anything that has palm oil shortening in it.
