How to make a Lumberjack Breakfast

- New Orleans native Charlie Andrews demonstrates on how to make a Lumberjack breakfast. This breakfast has grits, eggs, bacon, sausage, pancakes and hash browns. We also top it off with a tall glass of orange juice. This recipe serves about 2 people but can be served to feed more people by increasing the quantities of ingredients. Hope you all will give this delicious full breakfast a try.

Why do I feel so calm watching Charlie's videos? Until he hits the table I get dizzy, lol.

Hello Everyone! As you all may know I am not perfect and we all make mistakes! If you want to add vanilla extract to the pancakes add 1 teaspoon. Also at the end of the video for the grits Add 1/4 teaspoon of salt instead of the 1 teaspoon of salt I said in the video! Thanks and I apologize for the mistakes!
Charlie Andrews I thought to myself he forgot the vanilla extract. It makes the pancakes taste so good Charlie yummy for my tummy. Lol.
Yes I did forget but the pancakes taste good even without the vanilla extract added to them!

The lumberjack breakfast looks wonderful but I have found that lumberjack breakfasts vary from region to region mainly based on what you have on hand. I am guessing and I may be wrong is that you are down south and can tell that because you are using grits and that makes sense. I am from Maine and where I grew up in the north, we use what we have on hand. Grits are for the most part non existent and beans are the common item we use is beans and depending on what we have, we will also throw an extra ham steak in too. I know when my mom use to make it for my dad, she had to use the family turkey platter to fit it all in plus another plate for the pancakes. Again what is special about the breakfast, and depending where you are too some may even call it a farmer's breakfast or a hunter's breakfast depending on where you are and what civic group runs it, is that it is for the most part truly American. The only thing that comes close a bit is the English breakfast but a word to the wise who have never had it before, you best be hungry or you traumatize yourself with the portions. I will give you something to try. If you want to splurge, try using real natural maple syrup, put it in a pan , add butter (amount add to taste to your liking)and if you like walnuts add those then heat everything until the butter is melted then then add to your pancakes on the plate. Don't worry if you do not eat all the syrup, it can be reheated for the next time and in time the walnuts will candy themselves. Again great job on the video and the breakfast.

OMG, this is perfection at it's best. Charlie I love all of you presentations, layouts and most of all your patience while speaking, your explainations are priceless. I also love how you give tips such as placing vinegar in with potatoes etc. Now there you have it. BAM, BAM, BAM (Charlie's famous ending signature is the bam on the table, I love it). Yes this is the ultimate breakfast! Oh you remember the buttermilk pancakes video! These are a lil bit different. I just added more buttermilk and decreased the amount of milk. It's basically the same recipe! Let me know the results when you're done! :)

Not really but I did notice it when I made the first pancake. By then it was too late. I did add some vanilla to the pancake batter. Regardless it still turned out good even without the vanilla! Thanks!
