My answer is probably not going to satiate your question. I use GRBL because it is simple, and I understand it. There are reasons with sophisticated machines or with spindles to go with a specialized processor, but my machine is very basic. No frills needed. If I get that 55k Laguna, I might explore more options! 🤣
