I think the idea is great! Just a few tweaks and it’ll look fabulous. First off, as you said do the warp threads individually to make tidying up the top easier. Second, as the shape isn’t square and you’re limited by the amount and spacing of the hooks, do a border stitch around the edge of the heart around it. Either in a corresponding colour, or in a contrasting one. That’ll define the shape and make it look neater. You can still doit with this one. It makes the world of difference. That border stitch can also be useful to help work in any threads at the back of your work.
