I wish I was working there to taste the food. My orders would be ridiculous. Breakfast would be a 5 egg omelette with cheese, 3 hash browns, sausage roll, two sausages, one bacon and baked beans. Lunch I would have to taste all the meats with the full servings of sides. Yeah I would surely spend all my money in food there.

Hi, roast beef I normally cook to 52C, pork to 65C with a long rest after. When you take the meat out from the oven it is still cooking after, so the temperature will still rise in the resting period 👌😊👍

But can you possibly annotate your vids with the ingredients you are using , and why you are doing it. e.g a few loaves of bread in the oven, score the fat on the meat, add garlicc, white and black pepper....why.....why?????? Also, how long do you cook the meat for, e.g. beef, chicken.....I realise you are on an industrial scale, but it really would help us amateurs....I have always wanted to be in a working kitchen, just observing, what you do to prep, store, cook and serve food so quickly in the way you do. Far to old these days (70) but still keen and willing to learn. So any help you can give us in your vids would be graetly appreciated.
No problem, so, stale bread in the oven to make breadcrumbs, score the fat to make more surface, more crispy fat, white and black pepper for more layers of flavour, beef cooked to 52C ~ 130F (cooked to temperature, not time), than rested for at least 30 minutes while the internal temperatue is still rising to around 60C ~ 140F, medium rare. I used to work in food service at a nursing home and there was an older Russian man that was always cleaning and scrubbing and working hard!

When the foil breaks like that, take a bunched up bit of it and rub it off the broken part, it smooths it right down.
