A brief explanation: recording the video above can be accomplished by aiming a microscope at neurons growing "in culture" (in a stable unmoving dish, not in an animal). Capturing similar video in an awake behaving animal undergoing learning would be very hard because any movement of the animal would cause massive movement of neurons relative to the field-of-view of the microscope. However, collecting other kinds of data (not video) documenting changes to neurons during learning is possible and is a very active area of research. If you're curious, the data collected could be, for example, "electrophysiology" or "calcium imaging". Hope this answers your question!
What do the extra bright concentrations of neurons mean? Also in the middle of the youtube short, you notice an area devoid of neurons except for "a few" pathways. What does that "void" mean, or the black space?" Are those spaces reserved just in case the human decides to learn a new instrument or read a book or something?

Sadly this video doesn't have any information from the source, but I interpret, based on simulations and other research on neurological connections, that these are neurons forming new neural pathways. Another way to look at this is the brain of an individual developing their psychology.
This is how I make sense of this video should this be happening inside my head: "smart" (virtual sentient) being (i.e. "consciousness") as a by-product of these wirings percepting physical life causing his physical "dumb AI" neurons sniffing about for chemical markers, knowing where to group themselves on a given subject due to evolutionary datas (over millions of years) and "lessons learned" (over immediate responses) acquired in tiny changes, resulting in re-arrangement of these wiring actions (make new, copy-paste and/or delete), hence more domino action of the virtual "consciousness", which results in more rewiring actions by these neurons, rinse and repeat. Could anyone tell me if I'm close enough lol.

Anyone reading this with more knowledge is welcome to correct or add any info. For as far as I know they usually take stem cells or embryonic cells (usually taken from rats from the hippocampus) and put them in a petri dish or a bioreactor to let them develop, similar as they would develop in a living creature. The neurons survive because the environment in the medium is rich with the nutrients for the cells to survive. Sometimes they also genetically modify the neurons to make them have a fluorescent glow when fired, but I don't think they applied this technique in this video, I probably mixed it up wit another video where you see those neurons glow every time they fire which is fascinating to see. While these neurons grow over the weeks they "reach out" to each other to form connections. To make these neurons fire they create an artificial action potential and there are also multiple ways of creating this action potential. How they keep firing is a bit of complex matter as I heard it's usually a challenge to keep them firing on their own, but this is the main picture behind in vitro brain studies. I have yet a lot to learn but these are the main principles in a nutshell I guess.
