    I appreciate your review. The recent January '23 New York Times article that Noma would close next year brought me here. Your take seemed pragmatic, grounded, and balanced. I haven't been to this restaurant nor plan on going. But through your thorough, thoughtful, well-organized presentation I feel as though I've had a window into this world. Thank you! 🙏🏾

    Your videos are just great. One of the best channels I have managed to find that just honestly reflect what a restaurant looks like from the customer point of view. Yet there is nuance and the editing is on point. Which editing software, which camera do you use, maybe a good iPhone ? It’s great, the same goes for the music. When I have to do a personal pov of an event for example that kind of editing is exactly what I should be going for.
    Happy to see your channel grow as it certainly is worth following for most food enthousiasts out there ! Keep it up ;)

    Since Noma relies heavily on nature, I really feel like they can be hit or miss depending on the seasons. Since I like meat, I think I would’ve prefer the forest&game or seafood season over the vegetable season.
    But none of that matters because they will be closing next year. As long as you enjoyed your time there and got to experience a place like Noma at least once in your lifetime is all that matters.

      I can say this is real. I once dated a Danish woman. Have visited Copenhagen three times. and ate at noma twice. Currently have two close friends that work there. It's really impressive, I'm a cook that works a high class place in Maine. And what they do truly is unique and it really is the experience as well. The food is over my head. Brains, penis and hundreds of wat to ferment. It takes a special occasion and a open mind to eat here. I really appreciate the work that goes into it. Even if it's not my thing.

    I have got to say, that if you cannot enjoy a meal without fussing over if its vegetarian or not, its a silly bias.
    You can easily get vegan or vegetarian food that tastes allmost exactly like its meat counterpart. Meat doesnt really taste of much other than blood and umami if its filled with fat. Other than that, its just spices and texture. Those two are easily replicated. Most times you will find more tastes from plant based ingredients, so embrace the tastes, dont thing about if its plant based or not 😆

    Hello @Cat Zhang thanks for sharing this and giving us another side of what is mostly known to be an amazing restaurant. It's always good to hear pros and cons of something. Based on what you said and what I see from the video, I have to agree with you on those few dishes. I'm curious to know what places in Copenhagen did you actually enjoy or better, blew your mind, regardless of price tag, or any other places you've liked recently. Thanks.

      @@ChefCarlosMacias Geranium in CPH supposed to be the 2nd best restaurant in the world. Also Alchemist, Kadeau, Fiskebar, just to name a few. If you're into bakeries, CPH is loaded. Juno, Alice, Hart, Mirabelle, Meyers are all amazing.

    Ramson is also called wild garlic. Decently well known in the nordic kitchen. Lions Mane is fantastic. Its very rare up here. But its good that its getting recognition. Its also good for the brain.

    The Alchemist Holistic dining, would probably have been more to your liking, and consists of 50 courses of food art "impressions", and is an experience of gastronomy, dining art, as well as science, technology and design, and lasts for 4-6 hours and will cost you $575 a person, unfortunately it's almost impossible to get reservations for the Alchemist, but go look up Mark Wiens and World's CRAZIEST Meal - Alchemist - SOLD OUT in 3 MINUTES (Rasmus Munk)

    They actually forage alot of the food from what I know. Weird overlooked herbs like sorrel(which was used in the middle ages but fell out of favour for some reason) stuff that you can find in the woods and think nothing off.

    The tall triangular building in the back is an incineration plant, with a "ski-hill" on top (Artificial, plastic "snow") and was designed by a Danish architect, Bjarke Ingels and his Company: BIG.

      Do they eat people in that? Because Noma certainly doesn't do that. Alot of it is vegetarian.

      @@adrianaslund8605No they do not, I think if they had resorted to something as obvious as cannibalism in a thriller movie about a restaurant the film would have gone without recognition. What The Menu does instead… yeah, you’re gonna need to watch it to find out

      Hah, I was comfortably full after the meal but we also got a juice and wine pairing so I think without it, I might have still been hungry

    Do they change their prices based on the season? I assume the seafood season would be more expensive than vegetable season, no? If it’s all fixed pricing, I’m surprised anyone would go for vegetable season.

    Interesting how far they have gone with veg food, taking everything in within one meal may be too overwhelming for me though. This looks like a meal for which I need to undergo a few prep meals/crash courses. Great video. 🙂

    Thanks for your honest opinion - for some reason, Michelin star restaurants and their owners/chefs are most of the time put on pedestals and critique (even if validated and structured) isn't appreciated. So it's nice to hear some 'negative' feedback... That being said : I went to Noma almost 10 years ago and I was surprised to see the huge difference between 'our' menu and the one you got served. Yes, I know they have different dishes each season/year but I am talking about the general "tone" : your run seemed more 'basic' and minimalistic compared to the style that was served in 2012. Anyway... was it worth it? Frankly? No, it wasn't... we've eaten at 1 starred restaurants and restaurants with a high Gault-Millau score that we've appreciated more. And for a lower price... The most recent (sour) experience we've had was with a local 2 star restaurant over here in Belgium (De Slagmolen) - praised by many but everything was lackluster. Mediocre dishes, no atmosphere (you eat in a overlit room) and a service that was also mediocre. So : Michelin stars... they are... subjective and I've come to the realization that they're not a gold standard suited for everyone...

    In addition to charging hundreds of dollars for a 'meal', noma is known for exploiting up to 30 unpaid interns in the kitchen. The Financial Times did a piece about the Danish fine dining industry on June 2, 2022 which has made up my mind never ever to visit any of these fancy restaurants. Every burger joint that pays at least minimum wage and does not abuse or overwork his stuff is a better choice!

    I have not been to Noma and couldn't get a reservation for this coming summer so I think it'll be one of those could have should have restaurant in my memory. I often find that three Michelin stars restaurants mostly are perfect every dish. Rarely do they miss. That's what differentiate them from one or two stars in my mind. Sorry you had an underwhelming experience there. Seem like you are a foodie so I would try Mirazur if you get a chance. It's definitely one of top five meal I ever had. Every dish had a surprise. Every dish was well cooked. I think you will probably like Fat Duck as well. It's very quirky in terms of presentation with a side of fun.

    I was at Noma several years ago. I had somewhat the same experience. I expected something hyper-creative and that everything would be delicious, like at De Librije for example. The creative part was there but often I wondered "Do I even like this?". So the classic three Michelin star restaurant experience, it was not. It was however the most interesting and thought-provoking meal I had. I remember carrot and ashes, which tasted like carrot and an ashtray but it worked. And some leaves with fermented grasshopper which tasted like the greenest thing ever (think of newly cut grass). We also had a smoked egg, which was just a very well cooked egg. Maybe 4 out of the 22 dishes were delicious, some were nothing special and the rest really challenged everything I knew about taste. So it was money well spent, but not for the reason I expected when I booked..

    I went with a group of friends at least 10 years ago, like you, I was hoping for more protein. What was served was deer tongue, nice, but nothing special. Sustainability, sourcing are important, but personally, I think some restaurants like Noma put too much emphasis on where their ingredients should come from, how it looks and is presented, that the taste gets a back seat. On the occasion, fine dining feels like I'm going to a fashion show, you get the odd ostentatious outfits and then you get a marvel of a dish. Love it or hate it, its all part of the show I guess. Anyways, at the end of that noma meal, I had to stop by a hot dog stand. Even though I was full, I just needed some grease to line my tummy as the dishes were to 'clean' hahahaha...

    I just keep thinking of the movie "The Menu" whenever I see stuff about Noma. They did a documentary about the restaurant a few ago that's kind of interesting but super pretentious.

    Love the insight this video has, i create recipes that are luxury low calorie and tasty and pure in ingredients so this gave me some new ideas. I also saw stuff similar to what i made.

    Thank you for this refreshing review and take on Noma!! I'm doing a video about how Noma inspired The Menu (2022 film) and they're website has very little information about the food they serve and the price lol. A question I've aways had is what do they do if you have allergies? You might not know the question, but for instance Alinea on their website says they don't do allergy substitutions at all and that feels less than creative to me.

      I don't think it's anything about creativity. It's about them spending many hours on end finding new dishes every year. Then also having to spend even more time to make every single dish have an allergy substituion? And it would have to meet the standard of the normal dish, otherwise they would lose reputation. That would be a ton of extra cost and time.

      @@fredriknumse8991 To me, its just not creative especially if they know beforehand, they would have time to prep. The whole point of paying for an expensive meal like this is the experience, the quality of food, and the one on one nature of hospitality. I've been to many award winning restaurants that gladly offered allergy replacements. I've had some of the most delicious foods that were prepped just for me because of my allergy. However, it's not just about me, there are also people who have allergies, eat kosher, don't eat red meat, or have certain specific dietary restrictions and I believe they should be able to experience fine dinning. To me, its in-accessible and un-sustainable which is one of the reasons why Noma is closing (the head chef stated that in a article).

    I would like to just have everything on the table. And then I would just pick which ones I'd go for and in what order. 😁 Like a buffet. 😌 I'd like to be able to mix and match on my own. Besides, those portions are quite small. It would better satisfy my eyes to just see the whole course in front of me as I munch along. 😅 That would be fun. But I can't afford it, so... nevermind. I'll just eat the flowers from our lawn. 🤣

    It really doesnt impress me .. this fine art cuisine has never jelled with me, mash and duck breast type meals however I'm all excited for. Proper food base a little ingenuity but excellent tasting is gonna get me everytime.

    I feel for you.. had similar experience in Copenhagen. Was totally disappointed with the food that was served (it wasn’t Noma). I guess that happens if you go with high expectations and reading positive reviews, till you face/taste reality! Frankly speaking paying so much for a vegetarian meal is outrageous! I appreciate the food presentation and efforts made by the chefs, and yet I would’ve expect more. Especially after watching “Someone feed Phil”.

    If you're from Chicago, I'd say try some restaurants like Alinea or Oriole to "train your palate". That way, maybe you can appreciate this more.

    Ngl for top ranked restaurants even if full vegetarian menu, its kinda cheap I mean there r many restaurants that will cost thousands for that

      Cheap?! I don't know where you've been looking or how out of touch you are but you can visit restaurants on the same level or better than Noma for less than a thousand dollars all in.
      To give you an example: the tasting menu for every restaurant ever ranked 1 on the Top 50 list charges less than $600 for their full tasting menu. Suggesting it costs thousands is very misleading.

    I haven't been there despite living only a few miles from there so I can't dispute your takes. However, Noma is inarguably the best restaurant in the world in the last decade. Tell me why I should consider your opinion? What are your references? Who many 3 Michelin star restaurants have you dined at?

      This is strictly my opinion. I'm sure most people loved their meal here. I really enjoyed it, it just didn't meet my high expectations. That being said, I have been to Alinea, Maido and Central :-) thanks for watching!

      After all the research its looks more like and extra expensive place, where humility its confused with mediocrity, where there is not tehnical hospitality (which you pay for) and the meal it's more like an experimental one, now I can say more, but I'll shut up just because the Noma sect it's huge and full of fanatics and also some sensitive people, but damn, the best restaurant in the world 😂😑🤔!

    so was it like being in 'the menu' lol - also if i paid over 400$ for a meal and found out there wouldnt be meat id be pisssssed - makes you wonder if that contributed to them needing to shutter this year - even u said u may have held off on a summer booking had you known it was all vegeterian all summer

      @@catthecritic yeah i feel you, but even if u happened to miss the veggy summer menu thing i feel like it would turn people off, if im not mistaken you even said had you known you may have held off on going (at least until they have meat on the menu) - btw did the staff live on the premises like The Menu and did the place give off any crazy vibes liket he movie cuz a lot of people thought it was a bit coincidental they shut down the day after The Menu dropped on HBO Max haha

    Nice and honest review. And well put together.
    One should however always get second opinions. Maybe the food was just not your style.
    I've seen many vloggers praising the food in Denmark, but I've also seen someone like Walter's World saying, that you don't come here (Denmark), for the food. It's very average, in his opinion.
    But he's a big size American, and probably used to the junk food, in the US.
    I've seen so many praising the burgers at the Gasoline Grill, in Copenhagen, but also seen an American saying it was one of the most average burgers, he had have ever.
    I've seen Asian people saying Danish food has no taste, but that's probably because they are used to spicy food - not only because some of them pointed it out.

    food is like art at a certain point you need to develop a palete and a lexicon to fully enjoy the experience , but still i really enjoy your review and restaurant is something that everybody can enjoy if they got the money for it so i really like your approach as you do not sound like snobish elite kinda foodies and as a chef its really important to think about all these aspect and not fall into the kinda misunderstand artist with his so complex artistic approach! thanks for the video !

    At Noma you Got exactly what they are famous for so I do not understand you are disapointed, If Want something diferent goto another place. About the Price ,welcome to Europe.

      Noma is just a snobfest, same with most if not all other high end famous restaurants. They are famous for small portions that doesnt satiate you. Serving insects and weird flowers and more.
      Its quite simple. They have a Michelin star? Run away!!!

      Hah, that's definitely part of it. And that's my fault 100%. Given their rankings, I had extremely high expectations for the meal so the fact that they had multiple misses for me made it a bit disappointing. But of course, that's just my opinion. Thanks for watching!

    I respect traditions. I will pay more to dishes cooked by professional chefs trained from Le Cordon Bleu. Noma looks like an international NGO with random young people working in the kitchen.

    They have 3 seasoned menus. Each year new season´s courses are new. They thus invent 45+ new dishes per year. It are clearly stated the season you chose are vegetarian. 3 people at 3 computers at NOMA´s website and none of you read it!
    If you came for a steak in the vegetarian season I guess you can feel disappointed, but it should be by your lack of knowing what you bought a ticket to. Despite your realisation of it being veggie I think you actually praised nearly all of the dishes. You liked the wine and special made juices. ALL the dishes are invented BY THEM so how can you say they were off taste a little bit, seemingly as a reference?
    15 unique dishes, accompanying special made fresh juices and wine. All seasonal, all local/Nordic ingredients. I am not a vegetarian and would not personally choose to go in that season but makes no sense to me you somehow seem to put some hidden blame "aura" on NOMA for your inability to even understand you invested in a vegetarian meal. You probably should have chosen the "game" season/fall/winter menu.
    Allow me to call the symptom of a "scroll" generation.
    Honesty is good, so are self reflection.

      It’s entirely my fault I didn’t read and picked the vegetarian menu. And most of the courses were terrific, I agree! But 2-3 of them were not (in my opinion, of course) and for the accolades that they won, it didn’t meet my expectations. But still a very good meal overall. Thanks for watching!

      @@catthecritic 👍 I BTW will agree with another that put a comment here. You probably would appreciate Alchemist more. Geranium in Copenhagen just won "Best restaurant in the world" and NOMA got into a new invented category because they did not want to keep them as number one forever despite the votes. Geranium are all veggie menu. I bet on Alchemist as well. I think you would love that one. But read up on it this time, they have an option for a wine menu that can cost a house.
      A 3 Michelin restaurant are NOT your average meal. It are something unique, "worth travelling for/to" for the connoisseur. The Michelin categories and their description are from a time where 75% of the global population did not travel 100 KM from their birthplace in a lifetime. The first week´s of a new season at NOMA or Geranium, all guests thus are amongst the first in the world tasting these inventions, you will belong to a group for a while that are more limited than people that have been to space. 2-3 that was not your "favourites" actually are not bad but even those maybe were "unique"? One of the dishes you did not like that much were your friends favourite and thus we can agree taste also are individually subjective. A food connoisseur can downright dislike a unique taste but still appreciate the art of food invention behind that dish.

    seems pretty underwhelming considering the hype surrounding this restaurant. Granted I didn't taste any of these dishes but I've eaten at 1, 2 and non Michelin rated restaurants that served more appealing dishes than this. Seems like they're trying too hard to be innovative and not hard enough to have the food taste good

    Thanks for the review. I think I wouldn’t enjoy it, I feel like when they try too hard to be creative it ruins the vibe. I don’t like thinking too much about what I’m eating. $450 is an insane price to pay, even for a 3-star. Fruit flies in a restaurant of that caliber is unacceptable for me.

      I'm not an animal expert. But how you gonna make sure the flies doesn't come in? And in case they do, how would you get them out? If they come in a season where the city is swarmed with fruit flies, it's not that easy to keep them out.
      That's like saying it's unacceptable for your 5 star hotel room to have a mosquito in it cause you left the window open. Too much privilege, don't be a Karen.

      Noma currently charges over $500 for the tasting menu alone, the price was still over $400 a year ago. So not cheap.

    YO, im sorry .. but.. i watch the Video 3 min 30... you get served oneof the BEST rosé wines in the freakin world and u call it a red wine.. i didnt care about any oppinion from this point on.. why would you review a retaurant like this if u have no clue what u are doing... i mean thats just a bad light on this, been there 3 times myself and i was so struck from the amount of perfection they put in everey square centemeter from start to finish, maaaan.....     This review is basically for food reviewers that would say all sushi in an omakase course is “FRESH”. If you guys think this review is helpful. This review for me is like saying Mona Lisa is just a picture of a woman drawn well. I’d do more homework if I’m a food reviewer and give some respect to the profession/task. This is misleading and a disgrace to the person who went bonkers of thinking bout the menu. THIS IS EXACTLY WHY MOVIES LIKE “THE MENU” EXIST TO SHOWCASE PEOPLE LIKE THIS REVIEWER.

    I welcome your opinion, so please don't let the Noma cultists dissuade you -- the entire vibe I get from the place is that of a cult -- a food cult -- with its own cult leader, Redzepi, who, like like other domineering cult leaders takes advantage of his followers, i.e., not paying them to work at his foodie 'compound.'
    And this season's menu is frankly for the birds! For half the price, I'll be going back to Nobu NYC!
