I am Bengali and I need to bring to your notice in KASUNDI, dry red chilli powder is not used. BENGALI people use "SUKNO LANKA " meaning "DRY CHILLIES ". Itmm is dried red chillies. In traditional Bengali Kasundi we don't use chillies powder

You didn't add vinegar to it while boiling. That's the main ingredient I believe.
vinegar won't let it ferment. Better add it after 10 days.

saute chicken, add curds and ample amount kasundi. Dont add garam masala. Boil it. Tastes yummy

Very sorry - but you have gone too far away from the original recipe. But if that gives you good taste then you can give some other name , say Bihari Kasundi or Punjabi Kasundi, but definitely not Bengali Kasundi.

do we need to refrigerate while letting the kasundi mature... will it spoil if left out or should we just refrigerate for 10days before adding salt? plz reply ASAP just made a batch today
varsha lata yes... Refrigeration is a must if the climate ia hot.. the vegetable cabinet of your fridge is a good place to keep the sauce

+sonia sharma It is mainly a marinating/dipping sauce. It is used in a manner similar to mustard - as a dipping for fish/chicken cutlets and pakoras.
Sonia, in the north of India, you use mint chutney, or tomato chutney for dipping, and in the South, we use imli chatni. This is what is used in Bengal, especially when we are eating maach - fish. Just dip, dip just dip! Especially if the chaunk- tarka is of mustard oil, which the Bengalis use extensively for cooking and so do the Punjabis.

Horrible. No salt no haldi and where did u see adding jeera chini hing. That will completely kill the flavour it would be a pickle rather.... You don't even know the roasted panch foron masala very own of Bengal which is must to add in kasundi...
