      Loved that Grant still refers Thomas as "Chef" ... It's a common thing in the culinary world, but the way he said it, with such reverence to his former mentor was a nice touch to see.

    Fucking legends. Both of these men are gastronomic innovators who have left their own mark within the industry all the way across the world stage. What to say? Alinea, next, per se, the French laundry. Wow man wow oh wow. These men accomplished more by 21 than I could hope to accomplish by 30.

    I just applied at grants restaurant online and i am more terrified that i get an interview than ever. What if he actually responds....i would drop everything and go for it!

    The mid '90s at The French Laundry was such an incredible time and place to be. Thomas Keller at the zenith of his creativity, and he was backed by an absolute rockstar team team featuring Grant and many other talented cooks. If you read about how Keller worked back then, it's actually insane. It wasn't just a single tasting menu like the restaurant offers now. There was an a la carte menu, a pre-fixe menu, a vegetarian menu, and a chef's tasting menu and sometimes even more than that. Every menu changed everyday, written by Keller and the cooks at 1:00 a.m. after service the night before. And Keller had a steadfast rule that apart from basic things like shallots and herbs, not a single ingredient could be repeated. Absolutely insane!
