How did you make the small insert cuts for the dowelled wooden biscuits inserts into the edge of each piece that you glued together with? Did you a special tool or jig do them?

It’s beautiful! Wish you had shown how it extended with the middle piece in there. Why didn you fill the holes before you put the hardware on in the first place?
I had to take the hardware off for finishing anyway, so it was just as efficient to do it after installing hardware. I like to do any hardware before finish prep in case I need to cover up any erroneous holes.
When you slide out the main panels and then set the middle panel, how does those all stay snug together? Did you add additional "window locks" for the middle panel?

If my tabletop is cupped a little bit, does it matter if you install metal supports on the concave side or convex side?

There are window locks between each panel, yes.
All you need to do is add in the 'missing' over-hang side panels! 😉 great use of recycling old wood though... happy days

Johnny, do ever tend to go through your milling process in more than one pass (leaving boards to set for a day or days and shift if they do)
For sure, pretty much always. This mulling process was done over the course of a week. Really helps the boards acclimate.

It would definitely work but I’m not sure on the specifics on the rod type.
