    I like the vid and I have a SNS. I have had my SNS for about a year, but unlike most SNS owners that make youtoob vids, you have never heard or seen me even mention the product or tell anybody to go buy one, and I am pretty opinionated, just check out some of my shit. I don't know why so many people are saying that it is needed. Are they getting a kickback, or just trying to be part of the "in crowd"? It is almost like a big Ball Washing competition. Oh, you said nice things about the SNS, but this person said better things, or my cooking is so much better now that I have a SNS, so you should go buy one. There is one very popular channel with a guy that has a ton of cookers, but just got his first kettle a few moths ago. He can't stop raving about how this is the best thing since Donald Trump invented fire. WTF!!!!!!
    Why do I have a SNS? Easy, convenience! I like the size of it and no need for stacking briquettes. 6 hours is about right for snake method like you did, I do get more time with the SNS, but rarely need it. There are a ton of ways to get log cooks on the kettle without SNS. I like the firebrick method too. I bought my first kettle in 1989, and wish that there was access to some of the accessories that we have today. I agree with you about the drip pan/griddle on the price, if it was cheaper maybe, but just to use as a griddle. I don't need a large griddle, but I don't need a standalone unit like Blackstone. Just something to use in conjunction with the kettle. The spinning grate thing is JUST FUCKIN' STOOPID!!! I would love to hear your opinion on the Arteflame accessory, I like it, because it is very unique and very well made. Not too practical in terms of how the cooking space(griddle surface) is laid out, but I'll say it again, I like it. I could keep going, but I need a beer.

      Heavy Metal Bar-B-Que you and I don’t conform to conventional thinking. I don’t have a kettle, but I would find a way around it, like vegetable cans filled with water that hold back a wall of charcoal.

    I've Been using this method on my 35+ year old Weber kettle for years. Direct for sear, Indirect for smoke. $1.00 water tray. Never a problem. Learn your kettle and your fire. Thanks for the vid...

    THANK YOU!!! I've been waiting for someone to make this video.
    Why spend $150 on something that does nothing you cant already do without it? I actually had an old veggie grill basket that I just bent into shape to hold charcoal. Works perfect, but not any better in my opinion than just piling up your charcoal on one side. Rather than spend all that money on a fancy basket, here's what you could buy instead:
    30 pounds of chicken
    25 containers of various seasonings
    20 large bags of Kingsford charcoal
    15 racks of ribs
    10 cases of good beer
    5 huge porterhouse steaks
    1 Weber Kettle rotisserie kit
    1 brand new Weber Kettle grill and some accessories
    Half of a Yeti cooler

    flawless technique ... especially the wood chuck placement. results are a clean fire and consistent temps 225-250 never had to do any major adjustments of bottom or top dampers.. once set, it truly produces great results.. thanks for this video...

    I’ve used the sns many times. I agree that it isn’t absolutely necessary. But I will say that it is extremely convenient. Works very well. I use a party Q along with it.

    Thank you! This is exactly what I was looking for! I suspected I could use this method in place of the Slow 'N Sear, but wasn't sure. Not only did you show that yes, I could, but you showed the most complete video of how to use the snake method with the water pan to do a slow cook/smoker in my kettle. Now I feel really confident for doing a slow/smoke cook next time!

      I used the information about the snake method that you gave in this video to slow cook/smoke a pork shoulder yesterday, and it worked great! Have you ever tried using natural lump charcoal to create a snake for long cooks? I think I want to try that some time.

    I've been doing the snake method since I bought my kettle a few years ago. I don't need the SNS...the snake method works! You just need to learn the vent setup that works for your kettle in your area.
    I'm with ya on this one, bro. Preach it!

    Good video, good to see all sides of a discussion, You are right, you don't need the SNS but it is a nice accessory to have, I have one, we use it on long cooks and it does a great job, but as with anything, it is an accessory so you don't need it to smoke, but it doesn't hurt either. I like the SNS for keeping the charcoal in place and having the water right next to the fire where it boils and creates steam and a moist environment, I never get that boiling action with a pan of water. Anyway, each to his own.

      Bad Beast Barbecue i appreciate the honesty. Glad to hear you enjoy the product. If you want steam you can place a small drip pan next to the coals and cover 90 percent with foil. Works every time. I learned that from am old BBQ Pit masters. The point of BBQ is the humanity and exchange of ideas.

    I think you made some great points.....the biggest point for me is what are you willing to pay, or what are you able to pay, for convenience. Everyone keeps saying that it is "convenient". But it is not a free convenience. Personally for what it is, it's not worth it to me. I can find other things to spend basically $100 bucks on. If you have the cash to throw on it, then go ahead. If I can accomplish the same thing for free, then I'm gonna do it for free. But that's just me. Kudos for making the video.

    Thank you for the video. I recently moved to Uganda and bought a kettle grill. I was looking up how to smoke on it and came across many videos promoting the SNS. I am unable to get one here in Uganda, but I do have tools. I was going to try and make my own but luckily have found your video. Thanks again for the good advice.

    I do a ton of smoking on my Weber Kettle. Did a 13 hour brisket a couple if weeks ago. Turned out awesome. I was considering a slow and sear so I would have to keep tending the charcoal. Going to try the snake method this weekend. You just saved me a $100 bucks. Thanks

    I like your wood placement much better than the smaller pieces in the snake itself.

    Good video, you are correct that no one needs one.
    I've been grilling and cooking indirectly on Weber kettles for decades, and smoking for a good art of that, and I've tried all the methods. All of them are just a bit fiddly and most reduce the useful space for indirect cooking more than the SnS does. The vertical water pan is the true genius as it means you can out a drip pan or even baked potatoes down there. It also puts more moisture in the kettle.
    I just find it easier and the sear is better, too. I actually prefer lump charcoal to briquettes because the quality of them is not great here, and that is another thing the SnS controls better, packing them in for a more even burn.

    I totally agree, I'm glad I made mine (Bro-n-Sear) credit where it goes, using the charcoal baskets, and I didnt get the results everyone said I would with this similar design as the SnS...I started about 12 lit coals and opened the bottom vent to 1/4, top less than 1/4, walked away and 30 min later my coals were out of control, and never recovered, even closing the vents only snuffed it slightly...either it burned hot as 350, or just about went out completely..I went back to the snake method, 4 coals deep staggered like yours are and Ill go 4/5th around the bottom . Im in the Tampa area so my air temps are normal and Ill get a solid 225-275 with vent adjustments and get 6-8 hours burn time...great video..subscribed !

    I think the biggest reason people are so up in arms about it is because of the price. The new one is $100 plus s&h and the 3 piece kit is over $200. If it was only $50 I don't think people would be talking so much crap on it. The whole point of the kettle is its relatively cheap and versatile enough to do pretty much anything. Why anyone would want to buy an accessory that costs more than the price of the grill itself is beyond me. Get some fire bricks or buy the weber ones for less than $20 and be done with it.

    idk its a personal preference thing is all. You can or cannot want to use it. i dont have a weber but i can tell you it doesn't hurt anything. some people like the look to it as well vs a pan etc

    One of the better conversations about this topic. HOBO keep it up. Never needed this item, either stacking the coals on one side or even using the baskets weber gives you with some kettles..either way.. stacking the coals never failed me.. and for long cooks.. the snake method is tried and true.

    People need to remember that BBQ is truly about the process and enjoying while learning.... having a whiskey and watching the day go by .... the food is secondary and with everything else you will become very good with time..... I have smoked on everything from a Weber to an 8x8 block hog roaster in my year and I’ve enjoyed every min of it..... what I’m saying is don’t buy into these SET IT AND FORGET IT devices you will just be disappointed..... like everything that good it take time and work ... learn from you mistakes so you can smoke on anything at anytime..... remember have fun and teach yourself like us old timers did....

      Totally agree with you. I have a stick burner Old Country BBQ Pits Over and Under smoke. I can grill on it by cooking directly over the fire in the firebox. I also have a gas grill and just bought a Louisiana Grills kamado 24 in. I take pleasure in figuring out how to manage my pits and grills. BBQ time is a chance to enjoy the backyard and have a cool drink.

    Hey man, REALLY appreciate your honesty! I just bought my first full-sized Weber Kettle (got the 26”) after 12 years of gas grilling and trying a Weber Jumbo Joe. Like you said...found a TON of vids saying the Slow N Sear was basically the only way to go and I had almost convinced myself I had to go that route. I’m new to charcoal so I have no frame of reference. I knew about the snake and minion charcoal methods (and some others), but you have to hand it to the SNS marketing team, they sure make it “seem” superior to those regular methods. So...thanks! I’m not drinking the coolaide just yet. Haha! Not saying I will never get a SNS because it does seem cool...but I will definitely hold off on making that decision until I’ve tried at least a few long low-and-slow cooks with traditional methods first. Looking forward to seeing some more of your vids. 👍

    May be a step up from my Smokenator but seems pretty close. With three Webers in the yard, I may try Vortex for wings. The warping concerns me and I have not had the problem with the smokenator which was a big upgrade from the bricks and water pan. Four hour cook with Kingsford and longer with better charcoal. The price difference makes me want to try Vortex but the griddle may help keep the kettle much cleaner. Oval foil pans cheap to keep one touch silver fairley clean. The boss much more likely to approve Vortex.

    Everyone is entitled to their opinion. And I appreciate yours. I have smoked on my kettle without a sns and it worked fine. But until you have used a sns you can't really appreciate how good it makes the kettle into a smoker. And I have literally thousands of dollars in smokers. But the sns is nice for smaller cooks and not use much charcoal. But I Love your videos man keep em coming!

    I've had the same Weber Performer for 9-years, replaced the vents control and temp gauge a couple times. Buy some fire bricks, 6 for $40 and use them for indirect and searing. Use aluminum foil for catching the drips and controlling air flow to the briquettes This is all you need to cook slow, medium and fast. The snake method also works well. Nice video Nichol.

      I had never seen the snake method before. My question for you is will it really maintain that heat with a large piece of meat in the grill burning as few coals at one time as the snake does?

      @@brianmunson5688 Yes, you can stack 3 to 6 high depending on the temps you want, 210 to 275. Lots of videos on the Tube, how to set up properly.

    Just watched - Was going to purchase a SNS . I'm glad you included the snake method because thats what I always use. I was thinking the SnS was going to improve something because it put a bunch of coal in a small area. I'm want to try a turkey so I thought if I had the coals in a more condensed space it would be better. I will stick with the snake method. I do two layers as you did but I get the chopped hardwood and put a layer of that between the coal. Thanks saved me $99

    Good honest video and I agree completely with your assessment. The Slow N Sear is a totally discretionary purchase. I have used the snake or Minion method to smoke ribs on my Weber kettle and I have also used the Slow N Sear that I bought before I saw your video. The snake method with a water pan under the cold side worked fine but let me tell you what I like about the SNS. First the water trough on the side of the SNS is brilliant. I also use the drip and griddle to to catch the grease. Cleanup is a snap, just pull the foil off and toss it. No juggling a pan of greasy water and where do you dump it? Also with the SNS you don't have to worry about one side of your food becoming overdone due to the radiant heat of of the coals. This is especially important when you're doing a reverse sear on a big hunk of meat like a Tri-Tip. The results with a SNS are simply outstanding. I am however skeptical of the claim that you will get 8 hours of cook time with the SNS. In my experience 6 hours is about it . Also, the direct heat section of the SNS is fairly small so if you have a lot of steaks or chicken that you need to get over the fire you'll be doing some juggling. So in conclusion, do you need it? No. Does it work? Yes. You decide

    Thanks man, great video, just popped up on my "suggested video list". I'm glad you came out and said it like it is! I watched Chris's channel, "Meatcranium", and he went hog-wild on the slow and sear too! I like people that are showing other people that there's another way rather than spending $200 on a piece of equipment they really don't need to buy.

    I'd say one advantage the SnS has over the snake is the space. I run a Ketttle 26", and I just did 3 8-9 lb butts in there with the SnS. A snake would have taken up way more space. Would've maybe fit 2 of those butts. It went for 6 hours and still had about a 1/4 of the basket to go, and 1/2 the water reservoir was used. So I just added some more coals and water, and it was good to go until morning.

    Hey man I just wanted to say thanks for making this video. I thought all your points are correct and I've been thinking those things also. You definitely DO NOT need the slow and sear to smoke on your Weber kettle. It's definitely tempting to have a new toy for your grill but once I saw the price I said no thanks. Il use my snake and water pan.

    For the most part I agree 100%. I do recommend having charcoal baskets just to help with longevity life of your kettle walls. BTW I do not have a S . n S.

    Aside from aluminum pans you can also use wire mesh to make containers for the charcoal.

    Thanks for the vid. I have a short attention span so I'm glad I stayed. I just bought 100 pounds of charcoal to force me off the fence and down to Lowe's for a kettle grill. Seems the only thing I can't put off is procrastination. I have to admit that I have all of the shiny objects you mentioned and then some on my Amazon wish list. Watching this saved me around 400 bucks. I like shiny objects. I've heard of the snake but this is the first time I've actually seen anyone do it, exactly how they do it, and why. I've had a Weber S-330 for years and have never regretted dropping nearly a grand on a gas grill. After years of use and some neglect it still looks and performs just as good as the day I got it. I did pony up for some Grill Grates. They're not cheap but I haven't nuked a two inch ribeye since I started using them. I'm going to fight the urge to get Grill Grates for my new kettle and use it "old school" for a while. After watching this I won't seem like a total noob when I start using charcoal now and then. I trust Maverick to keep me up on the grill and meat temps while I cool my heals inside. Thanks again for the vid. Cheers.

    My opinion usually means nothing most, but I feel the need. I've had a weber kettle since 2006 and have cooked nearly everything one can imagine on it. I'm more of a hands on cook. I don't really want the set it and forget it to be how I use my weber. I've used fire brick many times in mine to create a barrier from fuel to food. Works great! It seems more and more, that people want everything to be so perfect and predictable, that they lose the art of the fire. I don't think there is a right or a wrong way to cook anything. It all comes down to end result and opinions. How long with this take to cook at what temp? Till it is done, that's how long. My opinion is that I'm glad that I spent money on the rotisserie kit and the craycort grates, which is more fitting for my needs.

      Just my two cents, but isn’t fire management all about fuel, intake, and exhaust? Which on a Weber with or without a SNS is exactly the same? I find that depending on the temp and winds their is usually a “sweet spot” to hold 225 with mild adjustments during a 10 hour cook (with or without the SNS). Now if the SNS has forced induction with electronic temp control I think you could comment and complain about “set it and forget it”. Have you used the SNS?

    I had almost convinced myself that I needed all this expensive stuff and then I used my head and learned some techniques that have given me superior results. All of this cost me nothing and I’ve gained knowledge. Agree 100%! But then again I learned to smoke on a UDS before using the kettle. This is a breeze compared to that thing!

    I know this is an older vid, but wanted to chime in. I'm a novice weber user, but I have been using the snake method and its pretty infallible. Very simple and keeps temps constant. Never used a SNS and do not have anything against it or other weber accessories. What makes the weber so great is that its so versatile right of the box. The most important thing regardless of method is to get out there and BBQ some!

    I checked this video out after a Weber was long term loaned to me for free and I just wanted to “trick it out” as it were without actually having put a lot of time using it. Even if I don’t like it, maybe the guy who gave it to me will. So, I appreciate your “if you got one, great” approach, but also wish I had got the chance to try the “without” techniques” you demonstrated before I had bought it.

    Great video! I'm a firm believer that a Weber kettle can cook just about anything with nothing but charcoal and grates. I've cooked fall off the bone ribs with lump charcoal by just banking it and adjusting the vents. Even just banking you can still keep the temperatures in the 225-250 range. I did receive a SNS as a gift, and I will say that it really is wonderful. It's well made, and makes things a little simpler. However it is not necessary!
    To be honest the most useful accessories I have for my grill are thermometers. Wireless dual channel and a good thermapen. If you're planning on smoking or doing other long cooks, don't buy anything before you have these. Makes a world of difference

    after i purchased my first weber kettle i was under the assumption that you needed a SNS to do any kind of smoking in the weber properly, living in the other side on the world to america and the price they wanted for the SNS i decided to give a smoke cook a go without the SNS becuase of budget issues, so just using water in the drip pan and a coal basket with some hickory wood, i managed a 12 hour cook to 195f on porkbutt with average temp of 225F with 1 or 2 lid lifts to add more coal and spritz the wood. the meat came out perfect, im not going to bother buying a SNS even when i have the money to because im more then happy with the product i get doing it the old fashion way. if someone has the money to burn on a SNS then go for it i will not judge or say its wrong.

    Yes you can use the snake method or you can bank the charcoal with bricks or use the baskets Weber gives you and get good results.
    Just depends on your budget.
    Is your budget hamburger or ribeye steak?
    You do use LESS charcoal because when coals are directly on the kettle some heat goes out through the metal.

    I agree to use the WK as designed. I have Yoder pellet grill/BQ/smoker and I don’t need charcoal per se, but cooking with the Yoder is so boringly good, I am thinking to buy a Weber just to renew the aggravation. Anyway great video!

    I purchased a slow and sear and it makes it a lot easier for set up.... If you have the time and patience for the snake method, have at it. But a few buck in investing on a slow and sear, it's a time saver and gets you back to your beer as opposed to stacking up coals.

    I build and modify Webers. My first Kettle I purchased a Grillaque around the time that the SNS started coming out. I love my Grillaque which I think I paid around $69 bucks for.
    I belong to several Weber groups and one of the first things I tell everyone is you don't need a SNS but can use firebricks or a stainless heliarced mudpan to create 2 zone on the Kettle. If someone has money to spend then by all means its a nice accessory but not necessary.

    I use 2 1/2 fire bricks stacked on the side to make a charcoal wall. Same as slow and sear. A factory grill top will spin for “cold sear” method.

    It's not that I'm against consumerism or that I'm cheap it's just that I've seen this 4 episode TV show about how people have changed in the 50ies and have turned to consumers. Up until then they've only bought what they really needed and with all of the ads and commercials you sometimes forget that and this is why I really liked your video which doesn't strictly go against X but just reminds you that you can make do without it.
    I've been researching the subject because I'm planning to buy a weber and your video has shown me that I can save a few bucks (that I don't have because in my country we make less then in the US) and NOT buy this product.

    I've used a kettle for years, and there is an absolute difference. I know how to set my kettle up, and have definitely seen a difference. No accessory is needed but this is an absolute upgrade...let me continue
