This menu is rustic, as a lot of things Pépin are. Jack has an extremely nimble mind. He's so experienced, that he can make up delicious recipes on the fly. I am sure at home, he just looked in the refrigerator, and invented a meal.
Can pork be replaced with different meat here? would mutton do? what part to use?
